Trader Joe's to the rescue.
I cooked 3 cups of bulgur wheat, (1 Cup per foil pouch of TJ's wonderful Indian Fare). I added some diced cucumbers and green bell peppers from the garden. Put in dehydrator for about 17 hours. Made sure to smash the garbanzos. For six of the meals I selected one package each of Trader Joe's Palak Paneer, Punjab Choley and the Jaipur Vegetables.
Each foil package combined with a cooked cup of bulgur wheat and a few additional diced vegetables makes about two servings, depending on your appetite.
The event is called Backpack to Briefcase, which took place on Tuesday, April 14th in Latham Hall. This event was for graduating seniors to teach them about the world after college with topics including buying a car, 401ks, banking, buying a house, etc. Student walked around from table to table and spoke to each representative for about 10-15 minutes. Backpack to Briefcase was sponsored by Widener University's Career Services.
We covered about 12.3 miles with our newest scouts backpacking on their first campout with the troop. New and old did a great job!

After waking up at beautiful Lake Katherine, we packed up camp and headed over Windy Pass to camp our second night below Puerto Nambe.
