HACCP là gì?
HACCP (Hazard Analysis Critical Control Point) là hệ thống quản lý chất lượng vệ sinh an toàn thực phẩm dựa trên nguyên tắc phân tích mối nguy và kiểm soát điểm kiểm soát tới hạn trong quá trình sản xuất thực phẩm để đảm bảo rằng thực phẩm là an toàn khi tiêu dùng.
Ngoài việc nhận diện những mối nguy có thể xảy ra trong quá trình sản xuất thực phẩm, nó còn đặt ra các biện pháp kiểm soát để phòng ngừa. Hệ thống này được hình thành vào những năm 1960 bởi Công ty Pillsbury. Cùng với viện Quản lý Không gian và Hàng không Quốc gia (NASA) và phòng thí nghiệm quân đội Mỹ ở Natick, Công ty Pillsbury đã phát triển hệ thống này để bảo đảm an toàn thực phẩm cho các phi hành gia trong chương trình chinh phục không gian. Dần dần HACCP được phát triển theo yêu cầu của thị trường và được phát triển theo yêu cầu của thị trường và được áp dụng trong sản xuất công nghiệp. Nhiều tổ chức quốc tế như Viện Hàn lâm Khoa học quốc gia Mỹ, Ủy ban Tiêu chuẩn hoá thực phẩm Quốc tế CODEX (do WHO/ FAO sáng lập) đã thừa nhận HACCP là một hệ thống có hiệu quả kinh tế nhất cho bảo đảm an toàn, vệ sinh thực phẩm. HACCP trở nên quan trọng bởi vì nó kiểm soát mọi mối nguy tiềm ẩn trong suốt quá trình sản xuất thực phẩm, thông qua việc kiểm soát những mối nguy như: tác nhân gây ô nhiễm, vi sinh vật, hóa học, vật lý, nhà sản xuất có thể đảm bảo tin rằng sản phẩm của họ an toàn cho người tiêu dùng.
Ở Việt Nam, HACCP đã được biết đến từ năm 1992 và hiện nay nó đã được áp dụng rộng rãi trong các cơ sở chế biến thủy sản, đặc biệt là thủy sản xuất khẩu.
Hệ thống HACCP giúp cho chủ doanh nghiệp tin là sản phẩm của mình đảm bảo vệ sinh an toàn thực phẩm vì nó:
- Thường xuyên ngăn ngừa và xử lý kịp thời những mối nguy đáng kể xâm nhập vào thực phẩm từ khâu nguyên liệu tới sản phẩm cuối cùng.
- Kiểm soát dây chuyền công nghệ sản xuất để đảm bảo sản phẩm an toàn vệ sinh thay vì kiểm soát sản phẩm cuối.
Hiện nay, có một số phiên bản HACCP sau:

HACCP based Food safety System (Hà Lan)
ISO 22000, là hệ thống quản lý chất lượng đảm bảo vệ sinh an tòan thực phẩm cho các tổ chức tham gia chuỗi thực phẩm.
