thank you scot for another wonderful meal. thank you madhur jaffrey for offering these wonderful and accessible recipes. these were all repeat recipes for a night with dinner guests. actually we had never made the masala but only eaten neiva's version but the potatoes and salad have been made multiple times and are always superb.

 

the eggs masala was by far the stand out component of the meal. the eggs were hard boiled perfectly [flakey and moist yolks] and the sauce of tumeric, cumin, lemon, ginger, tomatoes and cilantro, among others, was so bright and flavorful. i could eat this everyday!

 

the mashed potatoes rock with jalapeno and scot tempted his colon by leaving all the seeds intact. the yogurt salad is the cooling dish that soothes the palate with milder flavors.
