I've never made these before. When Purim came around, I just bought them or was lucky to munch on a few at a gathering. But this year I made them from scratch.

INGREDIENTS:

3 eggs or egg substitute to make up for 3 eggs

1 Cup granulated sugar

3/4 cup vegetable oil

2 1/2 teaspoons vanilla extract

1/2 cup orange juice

5 1/2 cups all purpose flour (I use unbleached all purpose)

1 Tablespoon baking powder

1 cup fruit preserves. I used 1 can of Solo poppy filling

use any type of fruit preserves or pie filling

Directions:

1. Preheat oven to 350 degrees and Grease cookie sheets.

2. In a large bowl, beat the eggs and sugar until light and fluffy. Stir in the oil, vanilla and orange juice. Combine the flour and baking powder; stir into the batter to form a stiff dough. If dough is not stiff enough to roll out, stir in more flour. On a lightly floured surface, roll dough out to 1/4 inch in thickness. Cut into circles using a cookie cutter or a rip of a drinking glass. Place cookies 2 inches apart onto the prepared cookie sheets. Spoon about 2 teaspoons of preserves into the center of each one. Pinch the edges to form three corners.

3. Bake for 12 to 15 minutes. Or until lightly browned. Allow cookies to cool for 1 min. on the cookie sheet before removing the wire racks to cool completely.

A detail of a fresco inside the Church of Aghios Nikolaos, in the upper town of the old city of Mystras. Founded by the Frankish leader Guillaume de Villehardouin, ruler of the principate of Achaea, in 1249, on the slopes of the hill of Myzithra, Mystras was taken over by the Byzantines in 1262 before falling to the Ottomans in 1460. The city state flourished under Byzantine rule for nearly 200 years, becoming a major cultural and literary hub. By the time Greece won its independence in the 1820s, Mystras was a largely abandoned ruin. It has been a UNESCO-listed World Heritage Site since 1989 and parts of the old city have been restored since then.

Whiteface Mountain,Lake Placid

So much awesome natural texture to be found at Badlands National Park. This was taken at the Big Badlands Overlook located along the Badlands Loop Road. It felt like I was on the Moon. I fell in love with this national park and can't wait to see it again.

Maybe this is a shoot, not a bud? Currently it is 106 degrees F and supposed to hit 109. It has rained once in the past seven months, so it's amazing to me that anything grows at all!

An old photo from 2008 with some new processing

For a few years now Eddy has been saving the rubber bands that the postie puts around the mail. They started out as a tiny ball and now we have a large rubber ball sitting on his desk. I gave this a bleach treatment as the rubber bands that the post office uses are rather dull colourwise.

I created this texture for the newborn grandson of friends of mine. Didn't want the texture to be too soft, so I added the nail, rust & tape. Unfortunately the tape ended up in the middle of the little man's cheek! That was a bit too rough for my liking, so I cleaned it up to get this result.
