Home-made tiramisu to sweeten Your Sunday evening ;)

 

1 karp (200 g) biskotte (õhulisi kuivi keelekeseküpsiseid), 500 g mascarponet, 5 muna, 220 g suhkrut, kanget kohvi ja rummi immutamiseks, kakaopulbrit pealeraputamiseks.

Mascarpone segada kokku munakollaste ja 120 g suhkruga, seejärel segada juurde eraldi 100 g suhkruga kõvaks vahuks vahustatud munavalged. Näiteks suurde klaasist ahjuvormi laduda kõigepealt kiht kohvi-rummi segusse kastetud küpsiseid, selle peale kiht kreemi, seejärel veel üks kiht immutatud küpsiseid ja kreemi. Kõige peale puistata paksult mõru kakaod ja lasta öö läbi (min. 2-3 tundi) külmkapis tõmmata. Mmmmmmmm!

 

1 pk. (200 g) ladyfingers , 500 g mascarpone , 5 eggs, 220 g sugar, strong coffee & rhum, cocoa powder.

Mix the mascarpone with the egg yolks and 120 g sugar. Batter the egg whites to stiff foam with 100 g sugar and fold gently into the cream. Dunk the ladyfingers into coffee + rhum and lay them into a form. Cover the first layer of biscuits with cream and add another two layers accordingly, then spread cocoa powder on the surface. Put into fridge overnight. Done!

  

This is comfort food because it is just so indulgent - creamy and rich. I also relax by preparing food, so making and eating it helps to comfort me. The recipe uses espresso and so saves the need to make coffee after the meal!

 

This was my first attempt at tiramisu and I was really surprised how nice it was compared with shop-brought versions. I will definately try again (but with more brandy!).

This was almost a cinnamon challenge.

I made some tiramusi this morning. For those who don't know what that is, it's a yummy Italian cake. The exact translation of the name in English is "lift me up" cake.

 

The Recipe:

500gr. of mascarpone cheese

3 egg yolks

3 egg whites

about 28 sponge finger cookies

50gr. semi-sweet chocolate flakes

50gr. powered sugar

150 ml strong Italian espresso coffee

1 tbs. rum

 

put egg yolks and sugar into a bowl and beat till they turn into a light pale mousse. add the mousse to the mascarpone cheese previously stirred to soften. whisk the egg whites to form soft peaks and fold into the mousse. mix coffee and rum and dip cookies in the liquid one at a time. arrange them next to each other in a loaf pan 3" x 9" to form one layer. cover with cheese mixture and sprinkle chocolate flakes. repeat process to make another layer. refrigerate at least four hours before serving.

Tiramisu "Cheezecake”

 

This cake is three layers- a cheesecake layer and two cake layers…

 

Ladyfinger Cake Layer:

 

2 cups flour

Replacer for 3 eggs

2 teaspoons baking powder

1 teaspoons baking soda

1/2 cup vegetable margarine

1 cup Stevia

1/2 cup soy milk

½ cup white carob chips

3 tbsp Coffee Liqueur

 

Combine ingredients. Grease and flour 2 round cake pans- bake at 350 degrees for 35 minutes and cool.

 

Coffee Syrup:

 

½ cup Stevia

½ cup strong coffee

2 tbsp Coffee Liqueur

 

Mix and spoon over ladyfinger cake layers – refrigerate.

 

Cheezecake:

 

16 oz Tofutti “Cream Cheeze”

1 Cup Stevia

Egg Replacer for 2 eggs

4 tbsp flour

Soy Creamer by the tsp as needed (if too stiff)

 

Cream together ingredients. Pour into spring pan and bake at 350 degrees 50 minutes, cool 20 minutes then refrigetate.

 

2 cups Almond Kreme or non-diary whipped topping filling

 

Assemble:

Cake Layer/ Almond Kreme / Cheezecake /Almond Kreme / Cake Layer

 

Decorate with melted carob chips and dark chocolate covered espresso beans.

Tiramisù literally translated means “pick me up” in Italian. Tiramisù is a relatively new dessert in Italy, having been created in the 1960’s by Roberto Linguanotto, a pastry chef in Treviso. It is an extremely popular dessert and features on most Italian restaurant menus in Italy and abroad.
