We spoilt ourselves at Salt Grill in Surfers Paradise yesterday. Definitely one to go back to.

Recipe adapted from BBC Good Food

 

Double cream, mascarpone, marsala, caster sugar, sponge fingers, chunk dark chocolate, cocoa powder; and

strong instant coffee boil with water & sugar.

 

I often cook this delicious dessert. It's prepare from ready ingredients with no need to bake. That's what I need! :)

My wife made this tiramisu dish today for a neighbor's party. She's a great cook. People enjoyed it. It looks too pretty to eat.

We had a blast today playing bocce ball at the home of our long time friends who have a beautiful home in nearby Atherton. The overcast and chilly skies that we've had for days cleared up and we enjoyed the sunny weather that's expected on a long holiday weekend. I'm not very good at bocce ball, but it's a sport that you don't have to be particularly good at to enjoy, especially if there's plenty of good food and wine being served ! They had an excellent caterer who capped off the meal with this festive and fun dessert. Soon after I put the camera down, the dessert was gone.

It's Denise's b-day, and with the help of Al (he hinted, she liked coffee, chocolate, and well... tiramisu) this was created. Layers of soft cakey lady fingers were soaked with rich coffee, layered with sweetened creamy mascarpone and whipped eggs. The middle layer is covered with a blanket of shaved dark chocolate, the top layer is dusted with cocoa and left to sit until ready to serve. (Recipe inspired by Chubby Hubby's one from The Silver Spoon).

Home-made tiramisu to sweeten Your Sunday evening ;)

 

1 karp (200 g) biskotte (õhulisi kuivi keelekeseküpsiseid), 500 g mascarponet, 5 muna, 220 g suhkrut, kanget kohvi ja rummi immutamiseks, kakaopulbrit pealeraputamiseks.

Mascarpone segada kokku munakollaste ja 120 g suhkruga, seejärel segada juurde eraldi 100 g suhkruga kõvaks vahuks vahustatud munavalged. Näiteks suurde klaasist ahjuvormi laduda kõigepealt kiht kohvi-rummi segusse kastetud küpsiseid, selle peale kiht kreemi, seejärel veel üks kiht immutatud küpsiseid ja kreemi. Kõige peale puistata paksult mõru kakaod ja lasta öö läbi (min. 2-3 tundi) külmkapis tõmmata. Mmmmmmmm!

 

1 pk. (200 g) ladyfingers , 500 g mascarpone , 5 eggs, 220 g sugar, strong coffee & rhum, cocoa powder.

Mix the mascarpone with the egg yolks and 120 g sugar. Batter the egg whites to stiff foam with 100 g sugar and fold gently into the cream. Dunk the ladyfingers into coffee + rhum and lay them into a form. Cover the first layer of biscuits with cream and add another two layers accordingly, then spread cocoa powder on the surface. Put into fridge overnight. Done!

  

This is comfort food because it is just so indulgent - creamy and rich. I also relax by preparing food, so making and eating it helps to comfort me. The recipe uses espresso and so saves the need to make coffee after the meal!

 

This was my first attempt at tiramisu and I was really surprised how nice it was compared with shop-brought versions. I will definately try again (but with more brandy!).
