Early dry goods stores required a shopper to speak or write what they wanted to buy. Then the clerk fetched the stock and rang up the money owed. An innovation was to allow shoppers to wander around the inventory to self-select. Then the barcodes and scanners made it no longer necessary to type the correct prices of each purchase, so long as the database for each week's special prices was accurate. More recently self-service machines allow a shopper to unbox the inventory (big-box, buyers' club stores) or stock the shelves, then select items to buy, then scan on one's own app and bypass the kiosk scanners.
This photo near the atrium of a federal building has sweet and salty snacks with no clerk in attendance. Probably no coins or paper money is allowed: all transactions are digital (phone app, debit or credit card). The prominently displayed surveillance (recording) cameras at the checkout screen in the distance and the prominently painted criminal warning for those who can read English are intended to make the snacking person follow the transaction rules and not steal the inventory.

With three stations accepting cash and 4 or 5 other forms of payment (credit, debit, digital currency A-B-C) and three other stations for electronic payment only, that leaves only one lane with a person running the scanner and till. Most days seem to fill all stations and lanes with customers. But when all avenues are open, some people will prefer the old way, while others prefer the new way, free of human contact. As with any change in routine, it takes a little while to gain confidence and knowledge to quell performance anxiety and fear of costly error. Something analogous happened 10 or 15 years ago with the introduction of Self-service Gas Stations. A staff member stood by, ready to intervene instantly for questions, complications, or mistakes. Now in 2024 it is hard to find Full-service gas stations, but they do live on.
Thinking back to the earliest grocery stores, they went from separate shops per product (greengrocer, dry goods, butcher, cheese shop, fish monger) to single shop with clerks to fill one's basket, to shoppers picking own foods for cashier to ring up, to self-checkout. Maybe one day a person's bio marker will dispense with payment altogether. One's movements and smart cart will take the currency units from one's net worth upon exiting the building.
