Bacon Pasta: with Coriander and Black Pepper. (Serves 2)
Trim the fat from four thick rashers of back bacon and cut into strips. Fry in a little olive oil until they begin to brown.
Chop up an onion and roughly slice/chop up a few cloves of garlic. Add to the bacon.
Once the onions begin to soften, add a tin of peeled plum tomatoes, topped/tailed and chopped. I added some tomato puree for a little added 'oomph'. Turn down the heat and let it simmer.
I was using dried pasta (12 minutes) and added it to some salted boiling water at this point.
Grind up some coriander seeds in a pestle and mortar. Sprinkle onto the sauce and mix well. (I realise coriander is loathed by some people, but to them I would say, "1.13 billion Indians can't be wrong." Personally I love it!)
Again, in the pestle and mortar, crush some black peppercorns and put them aside.
Once the pasta is cooked, drain, return to the pot, and pour in the sauce. Add half the coarsely ground black pepper and mix it all very thoroughly.
Serve in appropriate bowls and lightly sprinkle with the remaining black pepper - to taste. (I might have shaved some parmesan over it, but we'd run out of cheese!)
Having a nice relaxing Sunday is hard to do with these little ones running around wanting to play :P

Every time i've come by this monumental tree with a camera, the neighbor makes some comment about cutting the thing down. Truly, my heart saddens with his desire and it pushes me to take more photos of it. But what good are these photos without the tree?

Birmingham City Council is under strong financial pressure - as a result of unfortunate behaviour in the past, and disproportionate cuts from the current central government.
One of the areas targeted for substantial cuts are all parks related services. I feel this is wrong, the return from a relatively small amount of funding to keep up maintenance and activities in the parks is so much more (in terms of health, youth, environment, social cohesion, voluntary activities,...) than the money saved.
There are only a few days left to tell BCC what we think about these plans. Please read what the Friends of Cotteridge Park say, and follow the link at the end:
"There are just 3 days left to tell Birmingham City Council that you want to save your Park Keepers, Rangers & Play Areas.
Birmingham City Council has made a series of proposals which seek to reduce spending by cutting services including in our park.
The main points of the proposed cuts are;
The loss of 16 Park keepers
The removal of 60 play areas
The loss of 8 more Rangers
A reduction to the woodland team of between 4 to 8 posts
The reduction of grass cutting from 26 to 12 cuts per year, in some cases grass cutting will be abandoned completely.
No final decisions have been made yet. They want to know what you think first."
