I've been making this forever and I'm pretty sure it's the best fresh salsa I've ever had.
*recipe*
3 garlic cloves
1 sweet onion
3 tomatoes, roughly chopped
3 tomatoes, seeded, more finely chopped than the others
1 bunch of cilantro, roughly chopped, some stems okay
1/4 cup yummy vinegar of choice (I like white wine)
1/2 can tomato paste
Salt & pepper to taste
I don't add hot peppers, because this is plenty zippy as is, but you certainly can!
This can all be chopped by hand, but I think it's much better to do it in a food processor. The flavors really mix but you still get the chunks of tomato. For this recipe, I used big tomatoes for the background and pretty-colored cherries for the ones added later.
Chop the garlic in the food processor. Add the onion and the roughly chopped tomato and process until very finely chopped. Add the vinegar and tomato paste and blend a bit, then add the cilantro and finely chopped tomatoes. Pulse just to blend. Salt and pepper to taste.
This isn't a canning recipe and it doesn't matter. I eat the whole recipe by myself in a frighteningly short period of time. I think the smell was coming out of my pores when I woke up this morning.
We grew some of the tomatoes and picked the rest at our CSA farm. Cheryl provided the amazing garlic, that sweetheart.
I was preparing a Mexican "salsa" tonight and the sight of the pan was great, so I decided to take a picture of it.
Hope you like the picture as much as I did enjoy the salsa afterward (with chicken tacos).

in Düsseldorf, Germany. Really bad light, but I hope you can get the impression of passion.
Okay, okay, what I meant was that it's low light, which makes it difficult to photograph. ;-)
Salsa Salad! Baby romaine, sliced grape tomatoes, corn, sliced olives... squirt with some lime and salt/pepper.
Although I didn't do this, I think an avocado based dressing would be great with this salad. Avocado blended with lime and salt, and maybe cayenne powder or a minced jalapeño.
It hasn't been a great tomato year, and I was afraid that I wouldn't get to make our annual allotment of salsa. No fear! I made 8 jars yesterday, and hope to get a few more (plus we have three left from last year).
Now if I would only have enough tomatoes for sauce and canning...
So, new Salsa came out yesterday... this bike was built for me. Really it was. I swear it. :)
The first pictures even have my fav Topeak Morph bike pump on it. It's like I've already ridden it. They should have called the Mike'r. ;)
In fact it's called the Fargo (like the movie) and it is a 29'r mountain touring bike. It's a whole new breed of mountain bike. A morph of cyclocross, touring and mountain.
If you were going to do the GDR, simply the TransIowa or for that matter just roam the back roads of Fargo North Dakota this would be the ultimate bike for you.
A few highlights.
1) Can switch between 700c road or 29" mountain tires up to 2.4" in width. In fact you could even build up a 26" wheel on the disk hub if say you were on the other side of the world and you busted a rim. It's just one of the many advantages of 29r's and disk brakes. In fact the only thing they possibly could have added was v-brake mounts for 26 and/or 29 inches wheels "just in case".
2) Cyclo-style drop bar for many hand positions.. for when you're out there riding a 14 hour day. (Still definitely a mountain bike.)
3) Has six water bottle mounts... see if you can find them all. Hint: when you have six water bottle mounts you can spare one for mounting other essentials.
4) Has all the mounts and trimmings including those for disks, fenders, and all manner of touring racks.
5) You can probably put a 29'r front suspension fork on it if you like but most likely it won't ever need one since 29r's are famous for their ability to absorb anything... well anything unless you're looking to do downhill or free ride... which I suppose you could swap out the bars and front for and do that as well.
6) Cro-Mo frame. The ultimate material for durability and value.
All in all it's a TREMENDOUSLY versatile bike.
I can't wait to get mine.
The only problem is it supposedly won't be available until February!?
Perhaps Salsa should send me one for "testing". At 6'5" and 250+ lbs I've been known to push things to their limits and I just got back from a 4 day / 400 mile trip down into the hills of SW Ohio on my Surly Cross-check. (Pics are forthcoming.)

Mais uma foto para não deixar acumular… Eis q surge na minha vida um flocado rosa! \o/
O esmalte é de excelente qualidade, secagem rápida (sempre com top coat, não vivo sem), mas no vidrinho ele é um rosa levemente puxado para o roxo (magenta), mas nas unhas fica um rosa bem rosa. Não gostei disso não. A cor no vidrinho é mto mais atrativa. Vou dar um jeito e jogar umas gotas de azul nele... =D
