Those of us who live in / near Glasgow in Scotland are treated to the largest annual winter music festival of its kind in the world – Celtic Connections. It is also the UK's premier celebration of Celtic music. This year (2014) there were over 2,000 artists at 300 events across 20 venues.
I myself went to three excellent events this year and as always, wish I had gone to more. I decided not to take my camera, partly because I don’t think photography is officially allowed and I knew I would have a hassle with ‘professional’ equipment. I also am desperately trying to organise thousands of existing photos and did not want to add to the pile! I did sneak a compact digital to the AR Rahman concert a few days ago, but I haven’t seen the images on my PC yet.
This photo is from a Salsa Celtica concert a few years ago. They play a fusion of Afro Latin Salsa with Scottish/Irish traditional music! This has seen them and their music rapturously received all over the world from Scottish village halls to some of most significant international music festivals and concert halls. We met one of the percussion players at a small festival in Lochwinnoch village (where we live). He gave an impromptu workshop one night in our house (after the pub) and left our names on the guest lists at venues a couple of times afterwards too.

This is about thirteen quarts of tomatoes, three packages of a salsa mix containing all the spices and such, but I also diced up an onion, a green bell pepper and a red bell pepper from the garden.
In urgent need of a steerer trim....
Groupset is SRAM Apex. 50/34 up front, 11-32 at the back. I may have troubled the 34/32 combo a couple of times....
Brakes are Avid BB7s. I am a convert. No-one NEEDS disc brakes on a road bike, but they're nice to have. coming from frogleg canti's with almost non-existent stopping power in the wet they are a revelation.
Ok, this might not look like much. But this ended up being the most AMAZING salsa made with tomatillo's. Yum!!!

The tomatoes are ripe. Time to make salsa!
My recipe calls for Romas, which I did use, but I also used a few other varities, too--Sweet Cluster (really like this one in the salsa), Champion plus a couple tomatoes from my neighbor (Pink & Early Girl, I believe). I also added half of a Serrano pepper to this batch. If you're not sure how much pepper to use, add it gradually. One final note, if the salsa seems like it needs a little something else, it probably just needs a little more salt. Seems like I always end up adding another ½ tsp. or so.
Salsa Fresca
Before you get started, go buy a box of rubber gloves from the drug store! Dice the jalapeños bare-handed at your own risk--you will get burned. Drinking a glass of milk seems to help. Other burn remedies include rinsing your hands with rubbing alcohol and applyling a baking soda paste.
* 5 C fresh Roma tomatoes, seeded & chopped
* 1/3 C onion, finely chopped
* 1 fresh jalapeño pepper, finely chopped (including seeds & pith)
* 1 fresh Serrano pepper, finely chopped (including seeds & pith)
* 3-4 cloves fresh garlic
* 1 T extra virgin olive oil
* 1 T vinegar
* 1 T fresh lemon juice (I usually end up adding more.)
* 1 T fresh lime juice (I usually end up adding more.)
* 1 tsp. ground cumin
* 2 tsp. (rounded) salt (I usually end up adding more.)
* 1/3 C fresh cilantro, minced
Chop tomatoes. Strain as much of the liquid as possible off of the tomatoes. Mix all ingredients. Blend about half the salsa in the blender then stir together again with the rest of the salsa (this makes the overall texture smoother).
Refrigerate 2 hours or overnight before serving (if you can wait that long).
Serve with good tortilla chips.
