This is my first rich fruit cake I've ever made. I baked it for my PME course. It was first covered with marzipan and then with RI. I found it very delicious and I'm positive I'll make one for Christmas but covered only with fondant :-)
Rich fruit cake
Ingredients ( 20 cm round/18 cm square tin):
875 g mixed dried fruit
90 g glace cherries
40 ml brandy
200 g soften butter
200 g muscovado sugar
3 eggs
250 g plain flour
1 ½ tsp mixed spice
45 g blanched almonds
Baking time- 3- 3 ¼ hrs
1.Mix together the dried fruit, chopped cherries and brandy, cover and leave for several hours or until absorbed. Preheat the oven to 140˚C . Lightly grease the tin and line the base and side.
2.Beat the butter and sugar until combined. Gradually add the eggs, beating well after each addition. Transfer to a large bowl and stir in the soaked fruit alternatively with the sifted flour, mixed spice and chopped almonds. Spoon into the tin and smooth the surface. Tap the tin on the work surface to remove any air bubbles.
3.Wrap a folded piece of newspaper around the outside of the tin and tie securely with string. Place the tin on several sheets of folded newspaper and baked for about 3- 31/4 hours. Test the cake towards the end of cooking time with a skewer inserted into the centre of the cake, it should come out clean. After baking, you can drizzle the cake with a little extra brandy. Cover with non- stick baking paper and foil and leave to cool in the tin.
Storage: When cold, remove from the tin and wrap in plastic wrap. Keep in a cool, dry place or fridge for 6 months, or freeze for 3 years.

Kottarashky is also a professional architect and interior designer. As a musician he is known for collecting recordings of traditional Bulgarian music, jazz, blues and gypsy singers and mixing them into an electronic trip-hop-influenced dance music style.
In a positive review of the album Opa Hey!, music critic Tim Cumming of The Independent wrote, "What you hear feels like a dislocated dream ride through the pungent soundscape of night-time Sofia. Robin Denselow of The Guardian rated the album as 3/5 and wrote, Each of the 12 pieces here is constructed around a catchy, repeated riff, created not just from electronica, bass or keyboards, but from brass phrases, voices or strings.

I work with Rich, he has Down Syndrome and is one of the most awesome people I know. (He did nearly push me in the road the other day, but I've forgiven him)
He likes to go to the pub, so I escape from work and take him as often as I can. He owes me like a million pints.
