The best thing about making borracho beans is using them later to make refried beans. Breakfast this morning: bean and cheese tacos with homemade pico, bacon, coffee, and OJ. good.

Two Corn and Flour Tortillas (Trader Joe's) lathered in refried Pinto beans (Thrive) and Jalapeno Hummis (WF); dollop of salsa; jarred jalapeños (WF) and Asparagus sprouts (WF).
This was good.
Shrimp enchiladas, Spanish rice, refried beans, salad, and fresh avocado ( traditional margaritas not shown, but greatly appreciated).
La Conquistadora is an excellent restaurant run by members of Sheboygan, Wisconsin's Hispanic community....fine, friendly people who create and serve delicious food.
The hazy cantelope of desire besmirched by memories of my childhood. Chile macho, come forth!
The layers, from the bottom up:
Tostitos tortilla chips
shredded cheddar cheese
canned refried beans
shredded cheddar cheese
chopped raw onion
chopped fresh cilantro
sliced pickled jalapenos
hot Pace Picante Sauce spooned over the layer
chopped fresh tomatoes
sliced fresh avocado
Microwave on 80% power for 90 seconds
then microwave on full power for 1 minute
then microwave on 80% power for 40-60 seconds until cheese is completely melted.

It sort of looks like slop, but was so good! Homemade refried beans that came out awesomely, thanks to lots of bacon and homemade mozzarella cheese. Turkey enchiladas. Mmmm.
Put together in short order from so few ingredients already on hand, and with such a delicious result.
so as you can tell i've been gone for 9 days...
i was in Florida!
i only brought my underwater digital camera so these are the best photos i could come up with(: the hotel charged a lot of $$$ for WiFi, so i didn't purchase it .. sorry. well now that i am back i will keep going with my 365. the photos in comments are the days i missed! i will try to catch up with everyone's photos(: and contact notifications.

A No. 4 tortilla stuffed with Dad's awesome meat filling, refried beans, tomato, lettuce, olives, cheese, onions, jalapeno peppers, taco sauce, and sour cream. This is so good you'll want to eat it all at once...only attempt this if you have paramedics standing by.
Most of us will prefer to eat half at dinner and the other half as a bedtime snack or lunch. :-)
A recipe for and an image of the meat filling will follow later...
What? No, I abso....wait, I can neither confirm nor deny whether I gnawed the other half of the burrito off of this half. Seriously though, don't you think I know how to use scissors?!

The national Venezuelan dish is the Pabellón Criollo, served with plantain slices it is called “with baranda” meaning with guardrail, plantain slices were placed around the food to avoid the broth to dribble over the border of the plate.
Served with a fried egg it’s called “a caballo”, often also served with grilled white cheese, or white cheese just grated over the stewed & refried black beans.

A simple and delicious dinner. Every item was fresh made. This is my plate - fresh eggs, a slice of the freshly made cheese from the dairy cows. The perforated design is from the cheese draining in a colander a couple of hours earlier. Frijoles or refried beans, fresh made salsa and hand made tortillas.
Dinner was followed with a cup of Café con Leche, (coffee with milk). In this case it was a cup of hot milk, fresh from the cows, with coffee and sugar mixed in. It was so good I had two cups.
