Puree stamper

A potato masher, tater masher, bean masher, pea masher, masher, or crusher is a food preparation utensil used to crush soft food for such dishes as mashed potatoes,[1][2] apple sauce, or refried beans. Potatoes mashed using a potato masher tend to be fluffier and lighter in texture compared to other methods of mashing, because use of the device reduces cell damage to the potato, releasing less starch.[3]

One of my favorite breakfasts to make. A baked whole grain tortilla, refried beans, meat (Chorizo, ham, or bacon), salsa, sunny side up egg, Queso blanco cheese, green onions, cilantro, cayenne and black peppers. The spicier the better!

Cheese Anchiladas

1/2 cup cooking oil

8 corn tortillas

1 (15-ounce) can purchased enchilada sauce

1 cup (8 ounces) grated or shredded cheese (such as mozzarella or queso blanco)

1 cup Cotija cheese.

Heat oven to 400 F.

Pour oil into a medium-sized saucepan and heat until it is hot, and warm the tortillas one at a time. Do not fry them. Remove tortillas from pan and drain on a paper towel.

Pour just enough sauce in the bottom of a 9x9-inch glass-baking dish to cover it. Dip a warm tortilla into the sauce, and then place a couple of tablespoons of cheese down the center of each tortilla.

Fold each half of the tortilla over the cheese, so that the tortilla is rolled around the cheese. Turn it over and place in the baking dish.

Make two layers of enchiladas in the dish, if necessary.

Pour any remaining sauce over the top of the enchiladas. Sprinkle the Cotija cheese over the enchiladas.

Bake for 20 to 30 minutes or until enchiladas are hot throughout and cheese is melted.

Perhaps not the most elegant, or elevated dish out there, but definitely enjoyable!

 

These enchiladas are Cheese Enchiladas, and are usually only made by special request, and for special events. I don't spend as much time in the kitchen as I used to, but even I have to admit these are well worth the effort!

 

Made this plate of Nachos on the day a Gopher Tortoise laid its eggs in our back yard.

What a feast!

 

Driving back to Bakersfield, we stopped for breakfast at Lilo's Cafe off the I-40 and on historic Route 66. We were served with a generous portion of chorizo and eggs with sautéed potatoes and refried beans on the side. It was so good! The menu is varied, and the prices are fair. Best of all, the server was welcoming and friendly. The diner had a retro feel with framed photos covering the walls. I recommend this place for anyone traveling on I-40 on their way to the Grand Canyon. One of the hidden jewels on Route 66.

Last week one of my sisters celebrated her birthday with only a few requests, one being homemade cheese enchiladas.

 

We celebrated her fiesta in style, including colorful placemats, tasty side dishes, piñatas, flowering cactus, balloons, a string of red chili pepper lights, and of course there were gifts and some cake for making wishes.

Chuy's is Chuy's is Chuy's. The one half a mile away doesn't deliver on Grubub, the next nearest is not one I visit in person.

 

Not complaining.

 

The Chuychanga last night was a little off, and I really don't like the fact that Chuy's only delivers Chuychangas with refried beans, the charro beans are easier for me to digest for some reason.

 

Again, not complaining.

 

The photo is missing the deluxe tomatillo sauce,. which is the best part of any meal, but it so messy to photograph. A good face stuffing time, all told.

Specialising in tacos and pupusas ( a thick corn tortilla filled with anything from meats to cheeses to refried beans to pork rinds usual in El Salvador).. You can buy groceries here as well as transfer money. Also if you have any gambling chips they will exchange them for money.

Basically, I made a heart shape aluminum foil mold. Then I put the foil mold in the center of the pan and fried an egg inside it. Done! =D

i have also been tagged again.

 

1) i get sick of foods really fast, like i cant eat the same thing alot. i like change in my food.

2) the only exception (that i can think of now) to the fact above is that i will pretty much always eat refried beans, i love them.

3) i have a sleeping disorder, and to try and correct it i have to go to bed at the exact same time every night, and get up at the same time every morning.

4) and when i get up in the morning i have to sit in front of this extremely bright light called a lightbox for 45min.

5)i ate way to much food today, and now i feel sick.

6)thunder storms still scare me.

7)i have never had my own room.

8)i got some sweet new head phones.

9) i love getting mail. and have always wanted a pen pal.

A popular antojito, the tlayuda is native to the state of Oaxaca. It is regarded as iconic in the local cuisine, and can be found particularly around Oaxaca City.

 

A Tlayuda consists of a large, thin, crunchy, partially fried or toasted tortilla covered with a spread of refried beans, asiento (unrefined pork lard), lettuce or cabbage, avocado, meat (usually shredded chicken, beef tenderloin or pork), Oaxaca cheese, and salsa.

I love P.B. sandwiches with my chili.

Whenever we had chili in school. They would always serve it with PB sandwiches. It just always seemed natural to me... as an adult. I have come across so many people who think it's odd. They never heard of such a thing. I think to myself, "where did they go to school?"

 

Every once in a while I'll find someone like me. I know one guy who actually will put a spoonful of PB "IN" his chili. I haven't been able to bring myself to do that yet.

 

O.M.G. --- Let me tell you. It's amazing how everyone has their own take on how to make chili. I used to work with this girl who always put refried beans in her chili. She swore by it... I thought. OK, I'll try it...

Well, I tried it. I made this huge pot (is there any other way?). I put the "refried beans" in it... took a bowl. Ate it... UH!!! It just laid in my stomach like a brick. I never felt so miserable after eating... I ended up throwing the whole thing away...

I don't even want to think about later...YIKES!!

Big ol $12 plate of Birria De Chivo (goat) from El Paisano Rosticeria Y Cocina in White Center.

My Chili Burger from Tommy's in Palmdale. While several people have raved to me about Tommy's, at least with the standard chili-burger configuration, I'm not exactly sold on this burger. The ingredients are pretty good quality, but this combination just doesn't do it for me.

 

Mostly, the chili was sub-par here. Instead of tasting meaty, it tasted more like a 50/50 blend of regular chili and refried beans, as if they've had the chili simmering so long all the beans have decomposed.

Dinner last night. Was REALLY good.

Mole negro hails from the southern Mexican state of Oaxaca. It is made from many ingredients including chocolate, peanuts, almonds, sesame seeds, 2 or 3 different types of chile, clove, avocado leaves, cinammon and other spices. These were made by my mother-in-law, which included chicken, cheese "queso fresco", toasted sesame seeds, and cream "crema mexicana" and of course, tortillas. We complimented these with refried black beans (frijoles refritos) and home made chips (totopos).

This was taken on Friday, Sept. 2nd, 2005 on or about lunch-time. A superb cheese enchilada dinner, piping-hot at Rosita's restaurant. Notice the minimum amout of onions and lots o' cheese. This was the last day of operation for Rosita's, she closed after her normal hours on this date. We each gave her a hug and told her how much we enjoyed all the great meals she had prepared for us over the years. What a special lady Rosita is, one of a kind for sure! We will miss her greatly!!!

another refried shot. I was thinking how would it work, but I have always loved so much the original (I guess it is the photo I like the most) that never dared. till today.

Each roll is about 160g, a medium-sized telera. Made great tortas with refried beans, avocado, tomato, chiles, and a vegan sour cream spread :)

Just as good now and they were then.

 

When, you may ask? Well, a month ago we celebrated one of my sister's birthday with homemade cheese enchiladas, Mexican rice and refried beans. I made an extra batch to save for later.

 

And this past weekend, a month later definitely qualified as "later" so all I I can say is thank goodness for leftovers!

Ridiculously hard to get these to balance on top of one another! The white and black beans were originally a gift from a Ukrainian friend- she said her Mam grew them at home. So I don't know what they are, we call them Ukrainian black and white beans. They grow really well in the North of England. The black ones make particularly good refried beans.

Two eggs over easy on some fried corn tortillas, swathed in ranchero sauce (a tomato and chile based sauce).In this case served with some refried beans and flour tortillas (to sop up all the sauce with). For 118 pictures in 2018, #96 "Eggs", this can be a breakfast or brunch dish, but most commonly it is for breakfast in any Mexican restaurant (or some other breakfast restaurants).
