A popular antojito, the tlayuda is native to the state of Oaxaca. It is regarded as iconic in the local cuisine, and can be found particularly around Oaxaca City.
A Tlayuda consists of a large, thin, crunchy, partially fried or toasted tortilla covered with a spread of refried beans, asiento (unrefined pork lard), lettuce or cabbage, avocado, meat (usually shredded chicken, beef tenderloin or pork), Oaxaca cheese, and salsa.
Ridiculously hard to get these to balance on top of one another! The white and black beans were originally a gift from a Ukrainian friend- she said her Mam grew them at home. So I don't know what they are, we call them Ukrainian black and white beans. They grow really well in the North of England. The black ones make particularly good refried beans.

While it may not look like it, this is actually a close up of homemade Cheese Enchiladas, with sides of rice and refreid beans.
The enchiladas are smothered in a special thick tomato sauce that is good enough to eat on its own, but best over cheese enchiladas. Just saying. I double the recipe so there will be plenty of leftovers.
This was a special request from one of my sisters who just had a birthday last Friday. In keeping with the occasion, ¡Buen provecho!

Two eggs over easy on some fried corn tortillas, swathed in ranchero sauce (a tomato and chile based sauce).In this case served with some refried beans and flour tortillas (to sop up all the sauce with). For 118 pictures in 2018, #96 "Eggs", this can be a breakfast or brunch dish, but most commonly it is for breakfast in any Mexican restaurant (or some other breakfast restaurants). I rewrote a recipe given to me with the same title using what I had in the house instead of having to shop. It was delicious! (If I do say so myself)
FRIJOLE CHEESE SOUP
2 T. olive oil
3/4 cup diced onion
1 T. seeded and minced jalapeno pepper
2 small garlic cloves, finely diced
1 can Red Gold diced tomatoes, including liquid
1 can refried beans
1 T. fresh lime juice
1½ cups chicken stock
4 slices crisp bacon, crumbled
½ t. each: chili powder, ground cumin, and dried oregano
1 t. taco seasoning mix
2 oz. cheddar cheese, grated
Garnish with:
Sour cream
2 scallions, chopped
2 oz. grated cheddar
In large pan, heat oil; add onion, pepper and garlic and cook over medium heat. Stir occasionally until tender, about 1 minute. Add tomatoes with liquid, bacon, chili powder, cumin, oregano, taco seasoning and lime juice. Stir to blend. Cook for 5 minutes. Add stock and beans, increase heat to medium high and cook, stirring constantly until mixture is thoroughly heated. Stir in cheese until melted. To serve, ladle soup into 4 soup bowls and top each with a dollop of sour cream, chopped scallions, and grated cheddar.
Serves 4
Just as good now and they were then.
When, you may ask? Well, a month ago we celebrated one of my sister's birthday with homemade cheese enchiladas, Mexican rice and refried beans. I made an extra batch to save for later.
And this past weekend, a month later definitely qualified as "later" so all I I can say is thank goodness for leftovers!
Had lunch today at a local Mexican restaurant and ran into King Tut and a $5 frozen margarita - Happy Halloween
Onions and garlic sauted with olive oil left over from making Spanish omlettes (tortilla de patatas) until fragrant, with a solid pinch each of sea salt and ground cumin. Add the fillets and cook until they flake apart. Season with taco seasoning and continue to cook, crumbling the fish until the pan looks like you are cooking hamburger meat for tacos.
Smear refried black beans on the corn tostada, then top with fish, shredded lettuce, sliced radishes, crema mexicana (Mexican sour cream), pico de gallo, avocado, finely diced white onion, and top with your favorite taco sauce or salsa. I tbought about crumbling cotiha cheese on top, but cheese on fish? Decided not!
Am I obsessed with Nachos? YES, I am!

A quick lunch, sauce based on some of the pasta sauce from yesterdays lunch and beans cooked overnight in the slowcooker.
A mix of:
• Collard, Mustard & Turnip greens
in my own
• Special "Secret" Seasoning blend (brown sugar, apple cider, white & balsamic vinegars, black pepper, salt, smoke flavoring, smoked ham hock, red & white sweet onion, red pepper flakes, chile powder, cumin)
• Cracklin' cornbread with cheese, onion & jalapeño
• Hoppin' John (Central American Red Beans & Jasmine rice)
...with a pat of butter.
The reader will note, that with a very minor exception (ham hock in the greens, and cracklin'), this is a largely vegetarian meal.
Oh... some may wonder what "cracklin'" is - it's small pieces of pork skin & fat which has been fried & refried in pork fat until the "POP!"
Oh my, is it ever tasty!
We went out to dinner at Señor Taco for our 4th wedding anniversary. We both got Top shelf Margaritas and I got a Señor Taco salad and my wife got the Peghuga Rellena De Camaron with a side of Refried beans.

Poc chuc is a Mexican dish of meat, commonly pork, that is prepared in citrus marinade and cooked over a grill. Poc chuc is often served with a side of rice, pickled onion, refried beans, and avocado. Poc chuc is one of the signature dishes of the Yucatán
This was my favorite room in the house. The "picture gallery" wall was one of his proud collections. The lighting reminds me of Dutch Master's paintings.
Fredrick and his wife did a lot of entertaining and served them "exotic" foods that they discovered while on their world travels. One was refried beans and another curry chicken. Quite exotic for upstate NY protestants in the mid 1800s.

I still think of the San Diego-style taco shop as a scourge of stoneriffic gringo food, but if they do a reasonably good job of breakfast burritos, they have their time and place. Even better if they make a good chorizo & eggs platter. And extra points for inhabiting an old mission-architectural Taco Bell location.
It's really remarkable that these places are so uniform in menu and taste (and refried beans that your fork will stand up in) even this close to the Canadian border.
