The “cobwebs” in this image are actually a protein called vimentin in a quail embryo. The green spots are cell nuclei. Vimentin is part of the cytoskeleton and helps cells maintain their structure and resist mechanical stress. The protein is found in many animals and in humans.

Dry Ingredients:

1 cup quick or whole oats (not instant) *

6 flattened scoops of protein powder **

1/2 cup vegan sugar (demerara) ***

1 teaspoon baking powder

1 1/2 teaspoons Ener-G Egg Replacer

1/2 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/2 teaspoon salt

 

Wet Ingredients:

1/2 cup soymilk ****

1/4 cup water

1 tablespoon white or cider vinegar (I use apple cider vinegar)

1 cup crushed pineapple packed in pineapple juice, undrained

1/2 cup unsweetened applesauce

 

Spray the bottom and sides of a 8x8-inch glass baking dish.

 

Mix dry ingredients. Mix wet ingredients together in a separate bowl, then combine with the dry. Do not overmix, but you can add a little bit more soymilk or water if needed. Batter should be thick. Pour into the prepared pan, pressing the batter down to form an even surface. Mix together the sugar and cinnamon topping, and sprinkle it over the top.

 

Bake at 350 F for 30-40 minutes. Store in refrigerator once cool.

 

Serves 9

 

Per serving: 171 calories; 1.5 g total fat; 17 g protein; 22 g carbohydrate; 0 mg cholesterol; 176 mg sodium; 1.2 g fiber.

  

* I used whole oats. The original recipe calls for the oats to be ground into a flour-like consistency using a food processor, so if you don't like big oat flakes (like I do), then by all means chop them.

 

** I use My Organic Market-brand protein powder, Vegetarian, Natural Vanilla Flavor. This store is a local DC-metro area health food chain. For comparable results, this is the information per serving (1 scoop): 110 calories, 1 g fat, 250mg sodium, 28 mg potassium, and 24 g protein (note that this is pretty high, compared to other brands I've seen).

 

*** I used demerara, which the recipe called for and I already had. You can get this at health food stores, and I've also bought it at Wal-Mart.

 

**** I use Silk brand soy milk (Light Plain)

Right first thing i must point out is this is in fact protein and not cocaine ! I am currently doing some heavy arse weight training at the moment and all i seem to be doing is constantly eating protein or drinking bloody protein shakes, it's become a bit of a habit, 3 meals of protein and 3 protein shakes a day !
