Mostly-healthy banana protein muffins
2 cups oatmeal (Old Fashioned or Quick Cooking but not instant)
1/4 cup Truvia or Splenda
1 tsp baking powder
1/4 tsp salt
4 scoops vanilla protein*
1 tsp cinnamon
(2) 4 oz jars baby food bananas
1 very ripe (like so ripe the peel is almost black) banana
3/4 cup liquid egg whites (4 egg whites)
1/4 cup plain greek yogurt
1/4 cup water
1/3 cup slivered almonds
3 TBS Mini-choc chips (optional)
Preheat oven to 375 degrees.
In a large mixing bowl, mix together dry ingredients (oats, truvia/splenda, baking powder, salt, protein & cinnamon).
Add wet ingredients (banana baby food, banana, egg whites, water & greek yogurt) to dry ingredients. Mix well.
Line muffin pan with muffin cup liners and fill each cup almost to the top. They don't rise very much while baking, so don't worry about them overflowing. The batter is the perfect amount for exactly 12 muffins.
Bake for 15-17 minutes.
*My brand is ‘Body Fortress Super-Advanced Whey Isolate’ vanilla cream flavor.

Protein Powder - 520 cal, 120g
Cinnamon - 6 cal, 0g

If you don't have a super-ripe banana laying around, I don't see why you couldn't use a 3rd jar of baby food instead. The calories are virtually the same.
I also make carrot & apple-cinnamon ones that are a good bit lower in calories.
