On a bed of cooked, green lentils I've added a tomato, slices of red onion, cucumber, beets, avocado and black olives. Sprinkled with roasted garlic, black pepper and salt.
Just before eating, I drizzled on the salad my favourite tahini sauce and a spoonful of sunflower-seeds.

ingredients: kale, peas, mint, lemon zest, chia seeds, soy yogurt, egg replacements, salt and pepper to taste, served with mixed garden salad arugula and frisee salad, garnished with lemon wedge
Sweet potato (very sweet), carrot, cherry radish, raw onion sauce with soy sauce and apple cider vinegar, and stuff.
These are mostly organic veggies from Kimura Akinori's vegetable shop, where is dedicated to natural farming (a little bit or significantly different than organic farming).

Recipe to follow:
1 package of extra firm tofu, dried and pressed, then cut into cubes
½ cup fresh orange juice plus zest of 1 orange
3 tablespoons tamari
2 garlic cloves, minced
2 tablespoons ginger, minced
2 tablespoons sesame oil
1 teaspoon of sesame seeds
2 scallions chopped
1/2 bell pepper, sliced into thin strips
1 teaspoon arrowroot
Whisk together orange juice, zest, tamari garlic, ginger and marinade tofu 2-3 hours.
Heat a pan and add sesame oil- pan fry the tofu until browned on each side then drain on paper towel. Wipe the pan and then add the marinade, peppers, and scallions -heat to a boil. Sprinkle the tofu with the arrowroot and return to the pan, gently tossing with the sauce over low heat -add the sesame seed and then allow to thicken.
May serve with rice, soba, you name it. I just like it as it is!
Generously serves 2.
