A convenient breakfast for the holidays when you've got the eggnog and you don't want to make breakfast tomorrow.
Mix up 1/3 cup rolled or old-fashioned oats, some fruit or nuts (I used slivered almonds, pecans, and coconut), a pinch of salt, 1/4 cup eggnog, and 1/3 cup milk, sprinkle cinnamon on top, and let it sit in the fridge overnight. The next morning all the liquid will be absorbed and the oats will be soft and sweet from the eggnog, so no sugar needs to be added.
If you don't have eggnog, you can use other dairy such as milk, kefir, or yogurt. You can also mix in wheat germ, chia seeds, and other healthy fillers.
I do love looking at oats on the ridge and hope I get one more chance to photograph them before they are harvested.

Long hood forward CN 2813 (GE ES44AC) & (former CSX) PRLX 4835 (EMD SD70ACe) lead an eastbound CN oat train past the Barge Terminal Road crossing in East Dubuque, IL on 3/3/18. This picture is admittedly a bit on the grainy side of things (no pun intended), but I thought it'd be worth posting some of my more "interesting" older stuff.
This recipe looks indulgent and tastes delicious but is actually really healthy, simple and quick to make. Have a big bowl of it for breakfast or serve it in a sundae glass for a not too sweet after dinner treat.

I have porridge nearly every day for my breakfast and I like these thick oats. This is the new design on the box. One wonders why it's been changed. Presumably the previous design was thought to be outdated… but it says "Old Fashioned" on the box so an outdated design would seem to be particularly appropriate.
Those who saw last Friday's edition of the BBC tv programme "Have I Got News For You" will recall the panellists ridiculing the need for a new design.

I sectioned off the rest of the crisp so we could easily take a piece. I love this recipe. It's low in fat, it uses grape seed oil instead of butter. It has no gluten because I used Almond Flour and Gluten Free Oats in the crust and I didn't add sugar to the fruit. I used super sweet peaches so they made up for the lack of extra sweetener. This is actually a healthy dessert. The Peaches came from Indian Creek Farm down the road and the Blueberries were from my Co-op!

I love sea oats, always have since I was a little girl and we used to visit family down here in Florida. They're protected though, you can't remove them from the beaches or even touch them. They remind me of when I lived in my apartment out on the beach, the property had lots of sea oats and they would dance in the wind, a gentle rustling murmur of agreement with the sea.
