I hate the lighting in these photos but there's not much I can do about it. The lighting in our kitchen SUCKS! Oh well. This is the last one of the set because I made meatloaf and then cookies on Valentine's Day and I don't eat until all the cooking is done and the dishes are done.

I took this hearty ground beef and potato part of traditional British pub fare and tweaked it just slightly to make it vegetarian and lower fat, but still stick to your ribs and comforting. Making it in individual "pot pie" plates makes portion control, freezing and reheating easy for singles or families where everyone is on a different schedule too!

 

Individual Cottage Pies

Another night, another chicken dish...

though i will be in turkey

 

i will not be eating turkey

 

but all my dear friends

can still eat my balls

 

recipe:

7lbs potatoes, 1/2 idaho, 1/2 yukon gold

parmesan cheese

milk

italian bread crumbs

oregano

garlic powder

butter

vegetable oil.

 

peel, boil, and mash the potatoes as you see fit.

add a generous amount of garlic, parmesan cheese, and butter.

best to use a powerful hand mixer to get them to a good consistency.

go easy on the milk and leave 'em a little thick. let them cool in the fridge.

 

in a bowl, mix a ton of bread crumbs (half a can), parmesan cheese, oregano, and garlic.

fill a shallow bowl with milk.

one at a time, make a 2" ball of potatoes. gently work it between your hands until it mostly coheres together.

dunk it in the milk, roll it in the bread crumbs. then carefully do that again. ensure good coverage. at this point, the ball should be structurally sound.

 

fill a deep, small pot with vegetable oil. leave enough room to dunk something in it. boil it. do not leave this unattended.

when it is hot enough, use a slotted spoon to dunk the ball in there for about 30 seconds, or until browned to taste. this will take longer, the more balls you make.

 

this recipe should be enough for 20-25 delicious balls.

  

I took this of the mashed potatoes that we had for Thanksgiving.

This is the fantastic eight course meal our neighbor Jane Tove made for us and a group of friends at our house.

 

MENU

 

1st Course (Starter)

Puff pastry nest filled with salmon and prawns.

 

2nd Course (Starter)

Cauliflower soup with crispy bacon and homemade herbal bread.

 

3rd Course (Starter)

Scallops with Chevre cheese dressing.

 

4th Course (main course)

Wolf-fish on salsa topped with coriander butter.

 

5th Course

Dates rolled with bacon and pistachio nuts.

 

6th Course (main course)

Pork covered with Parma ham with mashed potatoes and vegetables.

 

7th Course (Dessert)

Baked wild berries covered with a mixture of mascarpone cheese, egg whites and icing.

 

8th Course (Dessert)

Chocolate mousse on meringue nests.

Served dish with marinated beaf, apple sauce and mashed potatoes. Chopped beaf being marinated in honey and soy sauce based marinade. Chopped chive on top.

Made up a Corned beef in our Dutch oven. Cooked it for 3 hours in Water with the seasoning packet and 1 and 1/2 packets of Onion soup mix. Then I parboiled the Baby carrots and Cabbage. putting them in a Slow cooker to stay warm. And quickly making the Idahoan instant mashed potatoes with packet of dehydrated potatoes and 4 cups of hot water.

Had leftovers for several days. Had some Reubens with the Corned beef.

These pictures have been sitting on my camera memory card for so long that I've forgotten what kind of fish this is. I remember that everything on the plate was delicious.

Michelle's first roast beef after a year of deprivation in Japan.

Just us this year. And I think for first-timers we did a pretty darn good job!

 

And, bonus!, we put several wedding gifts to use for the first time:

Plus the wine glasses and utensils were also wedding-related gifts.

Boston Market leftovers turned into a meatloaf "wall", hard-boiled egg humpty dumpty w/ cheese umbrella, mashed potatoes "sky", carrots, grapes, mac & cheese

Ikea's Swedish Meatballs. Was found to have horse meat in them last year so they removed it from the shelves but they're back in glory with a tag of 50% beef 50% pork ingredients. But somehow it doesn't taste the same. No worries, I'm still addicted...

Falukorv is a sausage originally from the Swedish town Falun in Dalecarlia. Now it's made everywhere in enormous quantities.

 

I have gratinated it together with tomatoes, cheese, onion and pickled gherkins.

 

Served with mashed potatoes.

Macro of the twice baked mashed potatoes my wife prepared to go with supper this evening.

I didn't cook dinner tonight. The husband did. I always tease him a little because the first time he made me dinner (over three decades ago), he made each thing one at a time, so by the time he got done, the first part was cold. When we started having kids, I was a stay home mom, so I did all the cooking. When he became disabled, he started doing a little cooking- like we'd get the frozen meat thing (like turkey in gravy or whatever) and he would make the side dishes. He's not doing massive meals, but he makes damn good normal meals.

 

So here's the meal I ate today. And that's what we're sharing in We're Here! today.

 

(fun fact- I hate vegetables. I only eat them because I'm an adult and I have to. Bleh).

An easy recipe and a traditional Dutch meal. Stamppot zuurkool is a very hearty and delicious meal.
