Team Pizza! Pizza & movie night after a long day of fire building and sap boiling... also known as sugaring. Everyone got to make their own pizza and we had everything from cheese to anchovy & peppers, from pepperoni to 3 meat 3 cheese. I'm still working on getting my pizza dough right for groups, I end up making too much dough and so everyone ends up with a bit more bready pizza than they want... And missing out on dessert. I need to start using a scale in my portioning. Lesson learned. When the pizza crust is so good, they serve it with butter. And I thought @gerrythorpe was the only person who did that. Do you do it? Turns out there's an entire town in Quebec - L'Islet - that does it! (I suspect it's a regional thing, not just this town) but my prayers was served with butter and my server and my spouse both agreed: I was the word one for bit doing it. I don't have this year's beauty shot of our maple syrup, but the season is not over yet. In the meantime, here is a little taste. This season's syrup is amber in colour but delicate in flavour. The season started late, but the sap has been sweeter than usual, meaning we are getting a better yield. The commercial producers have already identified that this year there is a higher likelihood of sugar sand, a natural particulate that becomes sediment at the bottom of the jars. It is usually filtered out, if possible, but reoccurs quickly and easily if you reheat your stop to over 200°. So of you are cooking with maple syrup this season, it's something to be aware of.
