Why, yes I did just whip up a peach cobbler with those peaches ripening on the counter. I did it the way i was taught, with sweet biscuits making a cobblestone pattern across the top. Though I did make a biscuit dough cylinder and slice off rounds rather than doing drop biscuits or even properly cutting the biscuits (so they didn't rise properly. But they taste sooooo good! Finished the last of this year's sap, producing a rich, deep maple syrup sweet, intense and yet still delicate. Highest yield yet! However this year, it comes with a crazy amount of sediment. Since we are doing small quantity, hobbiest, maple syrup production, we don't have a pressure filter. Which this year seems to have been almost a requirement. We haven't had much issue with particulate or sediment when sugaring in the past, and making sure we drip filter (using coffee filters), has been enough to keep most jars clear of naturally occurring particulate. But not this year. I'll be doing some more research to find out if this is because of the late season, and thus more nutrients in the sap or something else. It's finally strawberry season!! 🍓🍓 We can get fresh local strawberries bursting with flavour everywhere and we should! They are so good, and you can't even pretend they aren't good for you (unless of course you have an allergy) with claims abounding that they regulate blood pressure, help with immune functions, helps with arthritis and gout symptons, and reduces the risk of stroke. I mean, we're almost obliged to eat them. For our health! These were served as part of the @farmfoodcare media lunch for #FFC19 I'm sure you already know to look for local, dark, and aromatic berries to get the freshest ones with the best flavour. In fact, you can probably go for a little adventure and pick your own at strawberry farms near you. It's a great way to spend an evening or even as a weekend outing.
