I made a rub of brown sugar, red curry, cayenne pepper, crushed dried hot peppers, salt, black pepper, and paprika. I used a hot skillet with a little olive oil - 3 minute per side. Steak was medium rare, glazed and spicy hot. Just like I like. Just like my doctor would slap me silly for eating!
These guys have an almost stoic look about them on their plates. They'd been caught only about 5 hours prior to cooking, so they were absolutely fresh and delicious. Thank goodness extricating the meat is such a chore - I probably would have eaten all 5 of them in one sitting if it hadn't been for that.
Noisette Boulangerie baguettes that I've filled with Milawa free range chicken & herbs in homemade mayonnaise, farmer direct sourced watercress and chervil. We also took a thermos of celeriac, leek and bacon soup.

Tried my hand at enchiladas suizas tonite - chicken, spinach, corn, onions, wrapped in corn tortillas, piled in a casserole dish, covered in salsa verde, sour cream, cheese. Baked into melty goodness. Topped with fresh avocado.
I experimented in the kitchen again and actually this came out tasting great. I stir fried stewing beef, bell pepper, yellow onion, jalapeno, carrots, peas, broccoli, corn, green beans, and a slew of spices in a mixture of a 1/4 cupof pepper sauce and 1 cup of diet pepsi and a little soy sauce - I cooked it down it was thcik and served it with white rice.
