This is not my normal lunch....should be more often though....

Turn up the heat on your lunch and spice things up with delicious tofu fajitas! Wrap up your tofu and veggies in a grilled tortilla with a squeeze of lemon and some of your favorite salsa, finished off with some sweet pineapple. Fajitas are a fun healthy way to make a delicious and festive lunch!

Just under 450 calories today. Got some more mandarins, yay! And Cheesy Rice Slice is adapted from a recipe in a Student Vegtarian cookbook - I've used much lower fat ingredients and much more spinach than the recipe - it turned out soooooo perfect, I'm really pleased!

Using up some leftovers...la-dee-da.

 

We gotsa a homemade free range cheeseburger with some baked beans, chips, and pickles.

Is this too much?

 

12 oz wolfgang puck "white bean soup" (contains squash and carrots celery onions also)

 

16oz garden salad w/ peppers radish corn garbanzo kidney black beans broccoli peas etc. + 1-2 TBL balsalmic vinagrette

 

the grapes are for later around 3 or 4 PM when I get hungry.

Today’s recipe: Vietnamese rolls combine beef (lean and healthy) and British radishes (vegetables equal more healthy). These rolls make for an Asian appetizer or a healthy dinner. They are easy to make and even more wonderful when served with Greek yogurt!

A cute and fresh lunch for my kindergartener. Not sure he'll eat the cauliflower...that's a new one for him, but he does eat the other veggies...broccoli, spinach, and carrots. The reusable cloth sandwich bag came from snaksaks.etsy.com

starts on Monday. We've been having an active facebook discussion on filling this for my boy. His requirement: no cheese, no hummus (I'm going to work on that, though). Mine: no processed foods, though I do stick in an occasional organic gogurt. No processed lunchmeats (I am the food nazi).

About 440 calories today - pretty much all from the houmous! Admittedly not the best lunch ever but I had to throw it together in two minutes!

After giving birth, many moms are religiously trying to go back on a diet and lose the extra wait gained by pregnancy.

And after the first three months of not seeing tangible results, they often give up or lose hope.

Potatoes are washed, pricked and all ready to nuke. I put things that need to be warmed in silicone baking cups so he doesn't have to microwave the whole bento.

These homemade tater tots are waaay healthier than those you can buy frozen and deep fried. They are baked and are low in fat. For this recipe, besides flour of your choice, you will need garlic powder (seasoning is the key), cooked bacon, cheese (I love cheddar in tater tots!) and chives and Greek yogurt (high in protein & low in fat).
