Mini Gingerbread Houses on Cupcakes...from Cupcake Chronicles Newsletter...http://hoosierhomemade.com/cupcake-chronicles-newsletter/

As part of our annual Christmas activities, we usually put together one of those $10 gingerbread houses you can buy from the grocery store. We tried making our own gingerbread house one year but were very quickly undone by the complexities working with the gingerbread dough. Not to mention, molasses is just disgusting. So, we abandoned that particular task and chose instead to use graham crackers, a good alternative to actual gingerbread in times of crisis. But graham crackers still weren't gingerbread, and when we saw the ready-to-assemble gingerbread houses at the grocery store, we chose to assemble one of them instead. And so, it's not as original as it could have been and the delicious embellishments are limited to the tiny packages of candy contained within the kit. But it still is a gingerbread house, and it still is the product of our handy work. So, voila! Gingerbread House Mahler! On display for a limited time!

Gingerbread Waffles

1 cup flour

1 1/2 tsp baking powder

1 tsp ground ginger

3/4 tsp ground cinnamon

1/2 tsp allspice

1/2 tsp baking soda

1/4 tsp dry mustard

1/4 tsp salt

1/3 cup packed brown sugar

1 egg, separated

3/4 cup buttermilk

1/4 cup molasses

3 tbsp butter or margarine, melted

1/3 cup chopped raisins

1/8 tsp cream of tartar

In a bowl combine flour, baking powder, ginger, cinnamon, allspice, baking soda, mustard and salt; set aside.

In a large mixing bowl beat brown sugar and egg yolk until fluffy. Add buttermilk, molasses and butter and stir until combined. Add dry ingredients and stir until combined. Mix in raisins.

In a small bowl beat egg white and cream of tartar together until soft peaks form. Gently fold in to the batter. Bake in a preheated waffle iron according to manufacturers directions.

Recipe Notes: I love love love gingerbread. So these jumped right out at me as I surfed waffle recipes on allrecipes. Yes, these are a bit of work and I can't see making them for breakfast anytime soon, but they were perfect as dessert with some vanilla ice cream and a drizzle of the sundae topping of your choice (I went with caramel). The recipe turned out a soft waffle, there was no crispness to the outside, but that didn't really bother me. Mike and I both really liked the mellow taste, it wasn't an overpowering gingerbread. I can definitely see these turning up as dessert in the future. Especially near Christmas time.

The gingerbread village is a Christmas tradition at the Henry Ford Museum. The buildings are made from a wide variety of candies and other edible materials (for example, pretzels for log houses) and many are replicas of the buildings in Greenfield Village.
