Last year, I was looking for a good gingerbread loaf recipe. Something like the loaf at Starbucks, but darker, spicier, and a bit more dense. I found a recipe in 'Lone Star Legacy' (one of my gazillion cookbooks - it's one of those 'community' type cookbooks that are often sold to raise funds for churches or clubs). Anyway, the recipe seemed like a good one, but still not quite to my specs - so I swapped out white sugar for dark brown and increased the number of spices and the amounts, and this pretty much meets my demands. Here's the recipe:

 

Jen's Gingerbread Loaf

 

1/3 cup butter, softened

1/2 cup tightly packed dark brown sugar

1 egg

1 cup buttermilk

3/4 cup molasses

1 teaspoon vanilla

2 teaspoons ground ginger

2 teaspoons cinnamon

1/2 teaspoon allspice

1/8 teaspoon ground cloves

1/4 teaspoon salt

2 teaspoons baking powder

1 scant teaspoon baking soda

2 cups flour

 

Cream the butter and brown sugar together, then beat in the egg. Add the molasses, buttermilk, vanilla, spices, salt, soda, and baking powder and beat together until smooth and well-mixed. Add flour and beat until smooth.

 

Pour into a greased 9"x5" loaf pan. Bake in 350F oven for about an hour. Turn out of loaf pan and let cool on wire rack until cool enough to slice (or cool enough to wrap, if you are giving it away).

 

Goes excellently well with any of the following: Homemade chunky applesauce, whipped cream, vanilla ice cream, or (personal fave) custard sauce or vanilla creme anglaise. Some day I'm going to concoct a bread pudding out of it, I swear.

A primeira impressão da história do Gingerbread Man foi em de maio de 1875. O livro conta que uma mulher estava se queixando para o marido que queria ter um filho, porém sabia que eram ambos já velhos. A velhinha decidiu fazer um biscoito de gengibre, em formato de boneco, e colocou no forno para assar. Quando ela abriu o forno, o biscoito pulou da forma e saiu correndo pela janela aberta da cozinha. O casal correu atrás dele na esperança de comê-lo para saciar sua fome... "Corram! Corram! Corram o mais rápido que puderem! Vocês não podem me pegar! Eu sou o Gingerbread Man", gritou o biscoito. Enquanto corria, o Gingerbread Man encontrou um porco, uma vaca faminta, e um cavalo que também queriam devorá-lo... Gingerbread Man falou mais uma vez: "Corram! Corram! Corram o mais rápido que puderem! Vocês não podem me pegar! Eu sou o Gingerbread Man!". Então, o biscoito de gengibre percebeu que estava correndo em direção ao rio. "Oh, não! O rio! Agora eles vão conseguir me pegar! Como eu vou conseguir atravessar o rio?". Foi nesta hora que uma esperta raposa saiu de trás da árvore e se dispôs a ajudar o biscoito-homem a atravessar o rio. O biscoito pulou em seu rabo e lá se foram eles atravessando o rio. Quando estavam quase chegando à outra margem, a raposa pediu para ele pular no seu focinho para não afundar... Apesar do medo de ser comido pela raposa, Gingerbread Man pulou no focinho dela. Então, ela o jogou para o alto, com a intenção de agarrá-lo com a boca para matar a sua fome... E, diz a lenda: foi isso mesmo que aconteceu. Pobrezinho! Hoje somos nós que abocanhamos o Gingerbread Man!

Durante muitos anos, na Idade Média, o gengibre, ingrediente essencial na receita do pão de mel e posteriormente do biscoito, era uma especiaria difícil de se encontrar.Depois das Cruzadas, o comercio entre o Ocidente e o Oriente se abriu e várias especiarias, entre elas, o gengibre, conquistaram território na gastronomia européia. Inicialmente essa especiaria conquistou a cozinha do clero. Foram os religiosos que tiveram a idéia de fazer biscoitos com gengibre para celebrar as festas do inverno. E, dando continuidade a essa tradição, a Rainha Elizabeth I, da Inglaterra, mandava fazer homenzinhos de biscoito de mel e gengibre com a cara de seus convidados para suas festas de Natal.

my daughter made this for one of her friends as a Christmas gift. I think she has a long career ahead of her in gingerbread as this was one of her first.
