Penne with mushrooms, red peppers, basil, shrimp and vodka sauce, Garlic bread and red wine. One of my friends took us to a wine bar yesterday where I had this fabulous red wine. I had to go back and get a bottle and make pasta tonight, so I could have the wine!! :)

had a gift certificate for chilis that was almost two years old, thought i'd better use it soon. met up with a former co-worker for lunch to catch up.

I didnt take the shortcut making these. I learnt my lesson and went about making these breads the old, traditional way.

 

I got home in the evening, and painstakingly took out my kitchen weighing scale, bread flour, and instant yeast (i am a morning baker. i am not a big kitchen fan in the evening).

 

Thereafter, i let the whole party of ingredients in the refrigerator and wait for the instant yeasts to do their thang. I like yeast. They kind of remind me of the little elves who helped the shoemaker.

 

This A.M, i took out the said sponge dough from the refrigerator. I mixed, kneaded, proofed, baked as according to instructions. And i must say, the end results are a far cry from the previous baguette i made without the sponge.

 

I guess when the bakers gave instructions to have a sponge, they weren't actually just trying to make life difficult for others. These garlic bread are way more flavourful than the previous baguette. They are also chewy and moist within. Double points!

2 Bowls

Bowl 1

1 Stick of Butter melted but not liquid.

4 Cloves of Garlic chopped fine or minced

1/4 cup of fresh Parsley

1/2 tsp of garlic power

2 tsp of fresh Basil

Bowl 2 repeat bowl 1 but use 1/2 ingredients.

pre heat oven to 350. Cut the loaf in 1/2 and spread the content of bowl 1 all over the bread. Dont for get to get some on the crust as well.

Place directly on the oven rack for 9 min. remove from the oven and let cool for 2-3 min then cut the loaves in 1 1/2" slices. Use the contents of bowl 2 and cover both sides of the bread. Place the bread on a cooking sheet and turn the oven to broil. Now only Broil for 2-5 minutes depending on how crunchy you like your garlic bread. This last step is the most important as too much and you will burn the bread and to little your bread will be soggy. So watch the bread like a hawk. Enjoy I know we did.

I'm glad I drowned the salad and had all that vinaigrette to drink afterward. It was really good.

It was 5.30pm and I was on my way home from my son's new house to home (86km away) and it was the easy option to buy pizza to take home for tea. This was a 2 x Family size and 1 garlic bread deal for $20 which was excellent. It meant we had enough for tea the next night.

Definitely one of my favourite past time and Pizza Express has to be one my favourite places! This is what I have most times....sometimes without the yummy banoffee pie....I am suppose to be on a diet you know! The Bosco salad, though, is delicious!

 

PS This was taken last Thursday but I actually went to Pizza Express again tonight :s

I'm still so unispired... I need to find some creativity and motivation from somewhere! Life has been pretty hectic lately and photography is just taking a back seat.

 

This was my dinner; margarita pizza and garlic bread....with plenty of ketchup :)
