Week 30 of my group "52 Weeks of 2022" asked for kitchen close-ups. The theme got me creative in the kitchen, but I don't think the mini pizzas looked as good close up, so I didn't add these to the group. This one is of the thin rice cakes (Lundgren Thin Stackers Basil and Thyme flavor) with Italian tomato paste and crumbled goat cheese. I added a little extra Italian seasoning and garlic powder as well. This is what they looked like before microwaving.
P.S. My phone apparently adds a blur on the edges when using the food mode of the camera. I just learned I can turn that off, but if you look at this large, you can still see the details in the center. Please let me know if you try making your pizza using this idea or recipe. I'm totally hooked on goat cheese now.

I could not eat pizza for several years because of digestive issues with both the crust and the cheese. Lundgren Thin Stackers has rice cakes that I've been toasting for breakfast for a while, so I've been looking for other uses for them. Hubby got me some goat cheese, and it seemed a good idea to try that on the ones with basil and thyme. With some tomato paste and pepperoni, an extra sprinkle of Italian seasoning and garlic, and a minute in the microwave, I had some yummy mini pizzas that were simple and quick to make. And they have not upset my stomach, so it's a win all the way.
Wednesday I cycled 71km (44miles) out to Towner Park Road and through the trails to Wain Rd. and back along the Lochside Trail.
It's scrapbooking night at Cowboy Church, so it seemed a good night to share my first scrapbook page from the testimony books we're making. It's usually on a 2nd Saturday when I don't get to go, but the beginning of this happened when I got the scrapbook lady to come to my writer's group and teach how to make the testimony books. And hopefully you can read my writing on the index card. :-)
Just FYI: My husband and I took in 4 of his nephews who were living in an orphanage. It was temporary while their mother was on probation. But I loved all those boys like they were my own. The youngest, however, has developed a closer relationship with both me and his uncle. His birth mother gave us her blessing to adopt him (as an adult) because she said she never felt that connection with him, so I believe this is an answer to a prayer from way back when I was 15 and learned I could never have children of my own. In case it's too hard to read, here's what's on the card...

For all the mother/son dances I've watched, longing to be a mother after years of not having children, I never imagined I would stand in that place. I have been away to Taiwan for a short trip, attending one friend's wedding dinner. This shot was taken few days before the flight, where little tiny clouds surrounding the early morning sun, it's beautiful isn't it?
On the last Friday of every month, you can come to LaGrange, Kentucky (at the Oldham County Fairgrounds) and find one of the best free concerts around. Many of the acts that join us for concert night at Christian Country Cowboy Church (www.facebook.com/Christian-Country-Cowboy-Church-LaGrange...) are award-winning performers from the ICMA (Inspirational Country Music Association), and they make their way to our little church for the warm welcome they receive.
On this night, we hosted Alvarado Road Show (alvaradoroadshow.com/) and they brought their family to sing along. The youngsters here belong to the Clark brothers (Alvarado) and their sister, and they are doing a great job as Triple C Express (www.facebook.com/triplecexpress). Stop by their Facebook pages and listen to some music, and maybe give them a call to book them for your own church. The kids and Alvarado book separately, so it was a huge privilege to have them all together for our concert.
