These pics were taken last week when our neice had a dozen or so of her friends over for her sixteenth birthday party. The cats hid in the closet. XingXing is a bit more high-strung in general, and especially when it comes to strangers, so FuFu tried to calm him down with a very thorough gooming session.

gifty pounding fufu. made of boiled casava and plantain pounded together. a ghanain women usually makes fufu once a week because it takes so long but there are ghanains who eat it regurarly. i've heard it said, "i haven't really eaten until i've had fufu," from a ghanain man.

I lived in West Africa from 1977-1979. I went over under a joint Smithsonian/Peace Corps program to conduct research on psyllids (aphid like insects) that were damaging native African trees. The trees were planted in the hopes of slowing the southern encroachment of the Sahara Desert. Fresh from graduate school it was a wonderful but challenging two years for me. One of the foods that I learned to love from my African experience was fufu (pounded African Yam – Dioscorea species). During the following decades I often wished I could have this West African dish. Unfortunately, unless I was visiting Africa, I never could get it – until recently. The Kuramo Restaurant in Columbia, Maryland is an African restaurant – and they serve fufu. Now every couple of weeks I drop by and order fufu with ground meion seed. It is called Egusi on the menu. It comes with three types of meat (you choose). I always get cowleg and tripe. I am still experimenting with the third meat choice but goat is starting to win me over. The plate above has cowleg, tripe and fish. Fufo is eaten with your right hand – no utensils are needed. You pinch off a small ball of the fufu with your fingers and dip it into the ground meion seed sauce and move it to your mouth. Probably not for everyone but for me -- Wonderful!!

Conventional west African fufu is made by boiling starchy foods like cassava, yam, plantain or rice, then pounding them into a glutinous mass, usually in a wooden mortar and pestle.

I have watched it being made on numerous occasions, and it always amazes me how the person folding the fufu always seems to get her fingers out of the way just in the nick of time.

I was able to eat fufu ok at first, but after my bout with malaria when I was here in '06, I went off it and still cant eat it.

Fufu (http://en.wikipedia.org/wiki/Fufu) is a paste that is served under the soup. Traditionally Ghanians eat this dish with their hands (the restaurant supplies a bowl of water and dish soap to wash your hands with before and after the meal). I ate it with a spoon, I must admit, but it was excellent. My colleague thought it had the consistency of play doh.

I don't know if many other people refer to ladies bits as a fufu. I do, so this made me smile.

Machuca is a staple of the Garifuna, descendants of intermarried Africans and Carib natives who live on the Atlantic coast of Central America. Machuca's a sticky, satisfying mash of sweet and green plantains, rolled into bites and dunked into flavorful soups, similar to the fufus of West Africa.
