Nopales are a vegetable made from the young stem segments of prickly pear, carefully peeled to remove the spines. They are particularly common in their native Mexico. Farmed nopales are most often of the species Opuntia ficus-indica, although the pads of almost all Opuntia species are edible.
Nopales are generally sold fresh or canned, less often dried to prepare nopalitos. They have a light, slightly tart flavor, and a crisp, mucilaginous texture.
Nopales are commonly used in Mexican cuisine in dishes such as huevos con nopales (eggs with nopal), or "tacos de nopales". Nopales are also an important ingredient in New Mexican cuisine, and are gaining popularity elsewhere in the United States.
Nopales are very rich in insoluble and especially soluble dietary fiber. They are also rich in vitamins (especially vitamin A, vitamin C, and vitamin K, but also riboflavin and vitamin B6) and minerals (especially magnesium, potassium, and manganese, but also iron and copper). Nopales have a high calcium content, but the nutrient is not biologically available because it is present as calcium oxalate, which is neither highly soluble nor easily absorbed through the intestinal wall.
Addition of nopales also reduces the glycemic effect of a mixed meal.
First time lapse film. Accidentlaly left the autofocus on, so it jumps around a bit. Will be put together with other time lapses from church, with a soundtrack, to show the whole process.
Took a shot every 2 seconds for 1 hour (1800 pics), on manual at f/32 and 1/6 shutter to get some blur as people walked.
Alissa had to get her toes dipped in the water for her first trip up north. She was pretty calm about the whole thing.
It's like the first time, a little shorter. A little more deep.
I guess it prepared me. The other will remind me.

This is the first time that I've seen Herb out of his shell for the past week and a half. He just went through his first molt since we've had him, and he also changed from the painted spiderman shell to the natural one that we were thinking was too small for him. I've also been worried, thinking that he hasn't been happy in his crabitat, but when cleaning his food/water dishes, he decided to pop out and say "Hai"!

We woke up to a beautiful mountain view this morning. We also go on the Banff Gondola. Raine absolutely loved the view, the ride, and it was a beautiful way to spend the day with the kids.
Young Douglas was out busking for the first time ever yesterday... He told me that he's been doing this for awhile at home... After a recent discussion with busker friend Jimbo it was really good to see Douglas showing an interest, and I hope he keeps it up...
