Au XIème ou XIIème siècle, avec un petit châtelet en bois, le roi Louis VII fonde un prieuré bénédictin de femmes. L’eau y joue alors un rôle clé dans la vie qui s’organise en quasi-autarcie. Un siècle plus tard apparaît la seigneurie de Villarceaux et, au XVème siècle, un véritable château fort succède à la simple maison fortifiée des origines, le domaine faisant partie de la ligne de défense frontalière du royaume de France. À la Renaissance, il s’agrandit et devient une vaste propriété agricole et une résidence de plaisirs. Les jardins et plans d’eau sont alors redessinés selon le goût de l’époque, moins austère et influencé par l’Italie. Plus tard, sous le règne de Louis XIV, Ninon de Lenclos, maîtresse du marquis de Villarceaux, "capitaine de la meute du roi pour le renard et le lièvre", séjournera quelques années au manoir.
Les communs du manoir du XVIème siècle sont l'un des trois éléments, avec la tour des condamnés ou tour Saint-Nicolas et le pavillon de Ninon, qui subsistent du château fort historique. Les communs encadrent une cour fermée, composée de deux petites tours à l’ouest toujours visibles, abritant aujourd'hui des ateliers d’artistes.
Le pavillon de Ninon du XVIème siècle renferme d’exceptionnels décors des XVI et XVIIèmes siècles, n’est ouvert qu’à de rares exceptions et pour des petites groupes de visiteurs. Renseignez-vous auprès du domaine. La tour Saint-Nicolas et la terrasse médiévale possède l’une des nombreuses sources du domaine qui sourd à l’intérieur de la tour. Ainsi protégée des tentatives d’empoisonnement par les assaillants, celle-ci source permettait aux habitants de résister longtemps en cas de siège.
Le parterre sur l’eau du XVIème siècle est l’un des rares exemples de jardin sur l’eau préservés en France. Le parterre a été rétabli et les dessins de buis évoquent les parterres de broderies Renaissance. Le miroir de Ninon est l’une des pièces d’eau d’agrément de forme régulière aménagées au XVIIème siècle, appelé ainsi parce que le château du haut se reflète dans ses eaux alimentées par une délicate cascade.
Le château du haut a été bâti au XVIIIème siècle, le vieux château féodal ayant été démantelé. Ses fenêtres majestueuses ouvrent sur des perspectives rayonnantes, permettant au regard de se porter des jardins à la française à la campagne du Vexin. Le vertugadin tire son nom et sa forme des plis resserrés des jupes à panier que portaient les femmes de l’aristocratie et de la bourgeoisie depuis le XVIème siècle. Son talus rattrape la différence de niveau pour arriver à la terrasse du château du haut. La vue plonge alors sur le grand étang, 530 m plus bas, avec des statues des XVII et XVIIIèmes siècles provenant de Rome et de Côme. Bornée par des communs, un pavillon pour la garde armée personnelle du propriétaire des lieux et une chapelle, la majestueuse cour d’honneur autorisait l’accès des équipages au château par le haut du domaine. L’horizon boisé est ponctué à intervalles réguliers par des sauts de loup. Ces fossés creusés en bordure de propriété sont conçus pour en interdire l’accès sans masquer la vue sur le paysage. L’orangerie du XIXème siècle, flanquée de deux serres chaude et froide, permettait la culture d’oranges et de fruits exotiques pour la consommation des châtelains et de leurs invités. Les denrées étaient conservées dans une glacière souterraine, la glace étant prélevée sur les pièces d’eau, puis stockée dans un mélange de paille et de terre pour l'été (cf. site du domaine de Villarceaux, merci René Clement pour la photo prise sous la tour médiévale de Saint-Nicolas).
