Mole can be best defined as a thick, homogeneous sauce with complex flavors. This distinguishes it from most Mexican salsas which have a thinner consistency, are often raw, and contain fewer ingredients in still-identifiable chunks. Mole is compose of a huge selections of chilies, nuts and cocoa which make it a tasty and upscale dish of mexican cuisine.

The most common way to consume mole is over chicken, but at least one legend indicates that the sauce was traditionally served with turkey. Another preparation, more common in restaurants, is enmoladas (corn tortillas wrapped around chicken, cheese or some other simple filling) baked in mole sauce.

Because of the labor-intensive nature of mole, we mexicans prepare it at home most often in large batches on special occasions, such as religious holidays, birthdays or weddings. I made this mole at home, but to be honest , I did it from the already mole mixture sold in vase called "Mole Doña María". You can find it in any ethnic supermarket (I found it in Walmart).

Before anyone comments, let me say that I considered not posting this. I am NOT looking to argue with anyone. I have had enough of that the last couple months, but this is a relevant part of my life and I want to record it. Please keep opinions on the topic respectful or your post will be deleted. Hate to have to do that, but I've seen this topic bring out the worst in people lately :/.

Dissecting Brains!

The Education Aboard Network (TEAN) Sydney, Australia at the University of Sydney Fall 2012

I studied Neuroscience at the University of Sydney and had the opportunity, as an undergraduate student, to dissect a human brain and a spinal cord. MOST EPIC MOMENT OF MY LIFE. Although I did not eat lunch later that day, I will never be able to express to its fullest extent how incredible and blown away I was by this wet lab. I also got to do other fun things like administered my first EEG! I'm actually wearing my Niner Internation shirt here but it's hidden under the required cover up garments.

Tomorrow's leaders must think and act as global citizens in order to address the challenges facing humanity. Broadly defined, global citizens are people who are consciously prepared to live and work in the complex interdependent society of the 21st century and contribute to improving the common global welfare of our planet and its inhabitants.

The program aims to engage participating students as global citizens, helping them develop the knowledge, skills, values, and commitment to:

- Understand the nature of globalization, including its positive and negative impacts around the world, and realize how it is transforming human society;

- Appreciate the diversity of humanity in all of its manifestations, from local to global, and interact with different groups of people to address common concerns;

- Recognize the critical global challenges that are compromising humanity's future and see how their complexity and interconnections make solutions increasingly difficult; and

- Collaborate with different sets of stakeholders, by thinking globally and acting locally, to resolve these critical challenges and build a more equitable and sustainable world.

The session format includes lectures and discussions with an international faculty as well as formal and informal work in small groups. Topics addressed in plenary lectures and discussions include globalization and global responsibility; the social, economic, and political aspects of migration; the historical legacy of the Holocaust, human rights, humanitarian intervention; sustainable development; and the implications of the United States' influence around the world.

Participants will consider how these issues relate to their current situations and future personal, educational, and professional plans. They will also have the opportunity to develop projects and activities related to the session topic that can be implemented at their colleges and universities, in their local communities, and beyond.

Fictional narrative portraiture speaks to people in a way fashion or documentary photography can’t. It introduces characters and creates stories that don’t exist, allowing the viewer to fill in the blanks themselves. By including minimal context and providing no prompt with the images, they stand completely alone, and when viewed individually, beg for a story to be told.

In my series, I explore the field of cinematic portraiture and fabricate moments that might show a small piece of a larger untold narrative. I invite you fill in the blanks with your own version of the story.
