All the girls in the aviary had a quick dip in some insecticide wash, ready for the show tomorrow. Not all of them went but they all needed it anyway :)

- along all those roads there are channels to convey waters off the road or path. It's an arid landscape but sudden rains can cause important damages if not funneled to these dips.

On March 21, 2016, Honors Student Council hosted the second annual Dip Off competition. This fundraiser for Camp Quality Kentuckiana featured 17 dips for participants to sample and vote for.

Dipping sauce for fish

One day I'll learn how to take a good photo doing a dip.

The turning off to Merthyr Mawr converges to a delightful minor road which, like an old river, meanders and flows past sleepy fields and meadows. Slowing down, the road tapers to a narrow stone, hump-back bridge. This is locally known as the 'Dipping Bridge’. Built in the 15th century with holes in the parapets where farmers once pushed reluctant sheep into the River Ogmore for a seasonal dip. At the edge of the bridge once stood an Inn where the landlord would rob and murder travellers en route to St. David's Shrine. I too am a pilgrim, on my own pilgrimage, following my own quest. Crossing the bridge, I find myself suspended, not so much hinged between the banks of the river but more intangibly balanced, sandwiched between enfolding past and present events. Feeling my throat tighten, I give a sigh, knowing instinctively that once I cross the bridge, things will never be the same. In dreams, a bridge often represents the transition from one state to another. Like rebirth; it seems to symbolise the end of one cycle and then the beginning of another; a longing for or desire for change. Perhaps such dreams are a recounting of crossing points at pivotal moments in our lives? Travelling, like the transient nature of our lives consists of such magical illusions, precious moments melted into memory.

Simple Spinach Dip (translated: Not Diet Food)

 

Next time you think about going to TGI McFunsters for spinach dip try making it at home as it will take you 20 min and you can fry your own tortilla chips which is really nice.

 

Ingredients:

2 pound bag of spinach chopped

One chopped onion

Tablespoon chopped garlic

½ cup cream cheese

½ cup half and half

½ cup sharp white cheddar or a good melting cheese like fontina

Grated parmesan cheese

Grated nutmeg

Panko bread crumbs

Olive oil

 

Method:

Start by sweating the onions and garlic in some olive oil until they are soft and translucent, now add your spinach and a little kosher salt and pepper. The spinach will start to wilt quickly, now add your half and half and cream cheese and stir until it is melted and the mixture is bubbling. Now add the cheddar cheese and mix until it is incorporated, check for seasoning and add some grated nutmeg if you like. Continue to cook until it reduces so a nice thick consistency it should be tight not loose or runny. Now put in an oven proof serving bowl and grate some parmesan cheese on top and finish with some panko breadcrumbs. Bake in a 400 degree oven until it is golden on top and bubbling. Serve with tortilla chips or for something different some matzo crackers.
