The goal of the course is not only to complete the objective, but instill a sense of leadership and followership in the cadets.

This 1* Michelin restaurant is helmed by Chef/Owner Dominique Crenn. It's one of the most exciting and delicious food I've eaten by far. It was a 4-hour dinner to celebrate my graduation from Master's program.

The honey (from the table-top honey comb) was drizzled over this dish. Rounds of ham, grapefruit sections, corn porridge, were garnished with fresh dill and a sliver of carmelized fennel. As well, a crispy fried pulled-pork and sage gel finished off the course. (Rollover picture).
Taste: Deconstructed breakfast? The ham tasted like breakfast ham - like good Canadian bacon. The fried pulled pork leg was like crispy hash. Graperfuit added a nice bright element. The corn porridge was like grits. The sage gel was actually quite good - muting... I'm usually not a fan of sage, but it didn't bother me in this dish... found it quite appropriate with the ham and the especially with the "hash."
