Covid19 lockdown day 22. If there is one thing that I am thankful for during these times, is that I have rediscovered the joys of cooking. I have more time. More energy. Life has slowed down, and I find myself gravitating towards the kitchen and getting creative. Being from India our kitchen is blessed with a world of spices and flavors and colors. But sometimes it is just so much easier to go Italian! Hasta Pasta!

This is the final picture I will post from our trip to France. It all concluded on our final night with a cooking class in Paris. Our main dishes were crepes and a fruit salad. There was not much of a learning curve for either but they were delicious.

I haven't done one of these composites in a awhile. I finally got 3 AB800's to pull this kind of shot off. I work in a restaurant with awesome chefs. Hense the inspiration for this shot. Bartending is what I'm great at! I'm an ok cook. But not this good! LOL!

one day, short chef girl asked me why i am so interested in cooking lately. i told her that this is my goal this year using my own hands to make things instead of clicking a mouse and keep on clicking "undo" if i don't like how things turned out. i felt that i am losing connections with my hands and my mind.

 

living without a kitchen for 2 whole years, it has been quite a challenge to cook again. i always burn things up in the kitchen (oops). i'm so glad that i have a little kitchen now. cooking becomes a training and also a personal enjoyment for myself.

 

note: little cheesecakes turned out a bit dry because i forgot to put them in a waterbath and bake in low temperature.

Actually, nothing cooking or being prepared at the moment but I guess something will be happening when my wife returns from her shopping!!

"Today I am going to pretend to cook a Thanksgiving Diner…If you don't like you can go out to diner or make yourself a peanut butter sandwich….."

  

this fine gentleman prepares some amazing food in his little kitchen.

A time-lapse video of me cooking dinner yesterday evening.

 

A fairly simple meal - Pasta Bake, designed to use up whatever happens to be lurking around in the fridge at the time.

 

Here's a quick synopsis:

 

Gently fry chopped onions, garlic and chilli until soft. Add coarsely chopped vegetables (courgettes, red peppers, aubergine). Add chopped chorizo, and some sausages (skinned, and coarsely chopped). Add jar of passata, slug of red wine, salt and pepper, and leave to simmer for a good while.

 

Cook pasta. Drain pasta. Mix pasta and sauce together and transfer to baking dish. Top with buffalo mozzarella and bake in the oven until the cheese has melted and the pasta has crisped up a little on top.

 

Very tasty...
