Here's the rice cooker I used to cook the eggs. I think they are best when they are just cooked, not actually boiled. It leaves the whites much more tender and the yolks keep their bright yellow color without getting the green tinge around the edges.

We had an hour to kill, so we went to a little beach park in town and cooked up some hot dogs for the kids while they played.

This universal lid has a wide black rim that does an excellent job of toasting the buns in about 5-10 minutes.

At the last minute my coworkers asked me to cook something for the potluck at work tomorrow... I wasn't actually planning on going because I normally just go to the gym during my lunch hour, but they were very persistent, so I figured I will just whip up something simple. I didn't want to spend much time cooking tonight because I was planning on just resting. A lot has been on mind lately and I haven't been sleepin' well. But this is what I ended up making... A fried rice with egg and green peas. Not much to it really. But to anyone who's interested in how I do my fried rice here's the lowdown.

Cook a new pot of rice. Easy on the water. Once cooked, stir it up and toss the rice. Leave the rice in the cooker with the lid open so you get rid of the excess moisture so as to keep the water from soaking back into the rice. The common mistake many people make is that they cover their rice and what ends up happening is that since your rice has so much water in it, it'll turn out all mushy and overly soft when it gets to the wok phase. So let your rice sit out in the open uncovered for a minimum of 2 hours. During that time, heat up a pot of water and add about 2 tsp of salt. We're going to blanch the green peas for about 4 minutes (depending on how much you use, I used about 1.5 cups of green peas in this pic). If you like your peas cooked softer then by all means cook longer, just eye ball it. Once you believe it is done, drain it in a strainer and put them through some cold water to stop the cooking process - you don't want your peas to be too mushy or else your fried rice won't look very pleasant at the end. Once drained and cooled, let it sit in the strainer.

In a bowl miix up however many eggs you would like to have (normally 1 egg per person). Mix it up with some milk (don't use skim, use either 2 or 3% for best results). Add about 1-2 tsp of salt to it. While you are mixing, heat up a pan on low-medium setting and coat with olive oil (the chinese restaurants use lard, I'm not particularly fond of it because it clogs arteries). Once you have thoroughly stirred the eggs, and your pan is reasonably warm, dump your eggs into the pan and slowly stir and fold periodically to slowly cook the egg without burning it - the goal is to make fluffy scrammed eggs. It'll take a little longer than usual since you're cooking on a low-medium heat, so be patient. Once your eggs are done, put it into a separate bowl.

In a large wok, heat up a pan to medium heat and coat with olive oil. Throw in your peas and let them fry on the pan for a little. Once you start to smell the fumes, throw in your rice. On top fo the rice sprinkle some more olive oil - be generous because this is to keep your rice from burning and sticking to the wok. Toss rice and peas together and cook until your rice is no longer in chunks and are breaking off into individual grains. Once you see that happen, throw in your scrambled eggs and toss and mix thoroughly. Then add salt to your liking.

Met up with some friends at the beach and brought along two cookers.

Were able to cook up enough hot dogs, hamburgers, chicken nuggets and taquitos to feed 5 kids and 4 adults.

I can't remember the last time I had hot, perfectly crunchy taquitos at the beach.

The nice thing is that you can go for a swim and not have to worry about burning the food.
