Abstract: Fluids with different viscosity and rheological properties are presented in our everyday life and we are rarely aware of the reasons behind of the different behaviour. Water or Glycerol aqueous solutions show a different behaviour from other fluids like mayonnaise or aqueous solutions of some polymers when a shear stress (force vector component parallel to the cross section) is applied. The formers fluids responds to a Newtonian behaviour while the last ones are yield stress fluids. The yield stress is the applied stress we must exceed in order to make a structure fluid flow. This rheological property is of great importance in process like natural convection, used in the food industry. Natural convection within enclosed regions has been experimentally investigated using the experimental installation show in the picture.
