You need:
Potatoes, 3-5 small to large potatoes of your favorite type/color, cut into the configuration you in which you wish to eat them. I like to cut mine in to traditional french fry shapes or steak fry shapes, a little on the thick side. For the love of god, don't peel the skin off. That's where ALL the amazing nutrients potatoes hold are at, plus it's delicious.
Olive Oil(or whatever cooking oil you want, i like the flavor of the olive oil)
Boiling Water
a large pan, like, a 13x9" pan or some such.
Seasonings: these are anything you want to put on your potatoes. I like to use Onion and garlic powder, Paprika, pepper, parsley flakes and a bit of cumin. I do salt them, but not 'til the end. It's better to taste them first and decide if you even need the salt.
METHOD:
Get your pot of water boiling. While doing this, chop up and rinse your potatoes.
Drop the potatoes carefully into the boiling water and let them hang out in there until they're just getting soft. They should be able to break without snapping, but not really yield to your attempts to smash them without a bit of resistance.
When the potatoes are to this point, drain them into a collander and shake excess water clear.
Take a moment to begin pre-heating your oven to 400degrees Farenheit.
In your baking pan, drizzle some olive oil on the bottom of the pan, then dump your potatoes in. Add desired seasonings and some more olive oil and toss carefully either by hand or by shaking the pan. You want to make sure that every potato has SOME of the flavor.
try to level out the potatos to be as flat as possible, contact with the pan creates a nice bit of browning and crunch.
Place pan in the center of the oven and let them roast for about 30-35 minutes, or until they're getting golden brown and a bit of a crust is formed.
Once your 30-35 minutes is up, remove from the oven and sprinkle lightly with salt (i like seasoned salt for this) and taste test, adjust salt ammount as necessary.
Eat with your favorite dips!
