Doesn't this look amazing! My girlfriend ordered this most delicious and beautifully presented drink on Saturday night. Her daily serving of vegetables as she puts it. We had dinner at Jaguar Ceviche Spoon Bar and Latam Grill - a must stop for you if ever in Coconut Grove. The yummy cocktails enjoyed are made by Felipe. Clearly a master at what he does. More about Felipe later this week.

Cilantro is probably my favourite herb. One nice thing about planting it at home, is that it seeds itself year after year.

I braised 4 pounds of short ribs in a mixture of red wine, beef broth, yellow onion, garlic and a small can of minced chipotle peppers in adobo sauce for about 4 hours at 300 degrees F
Here is the recipe for the Roasted Pumpkin seed pesto. I found that I needed to add more water and olive oil. It was a but on the dry end
2 cups unsalted hulled (green) pumpkin seeds
6 tablespoons extra-virgin olive oil, divided
1/4 teaspoon fine sea salt, plus more to taste
2 tablespoons fresh lemon juice, or to taste
3 cloves garlic
1 cup roughly chopped fresh cilantro
Ground black pepper, to taste
Preheat oven to 375°F.
Toss pumpkin seeds with 2 tablespoons of the oil and salt then spread out in a single layer on a large baking sheet.
Roast until seeds are puffed and fragrant, 10 to 15 minutes, then set aside to let cool.
Combine seeds in a food processor with 1/4 cup water, lemon juice, garlic, cilantro and remaining 4 tablespoons oil.
Pulse until mixture forms a coarse paste, then season to taste with salt and pepper.
Cover and chill until ready to use.

I dunno why we ever put herbs in the fridge. This poor bunch of cilantro was as limp as wet hair when I stuck its sad stems in a little glass of water on the window sill. Now it's almost a real dang plant! (And since it's out and in-your-face, everything gets a cilantro garnish!)
This Cilantro Lime Rice is the perfect side dish for any Mexican Fiesta or Cinco de Mayo party.
