They have been delicious this year-succulent and sweet.Simply prepared by steaming and then tossing in lemon juice,lemon zest, garlic,olive oil, salt and pepper. They are also delicious grilled and raw.

Pasta was a use up what's around with onion, garlic, parsley, proscuitto bits,chopped sun dried tomato sauteed in olive oil and tossed with pasta and a little cooking water. Salt and Pepper to taste.Topped with parmesan.

Leave out the proscuitto for a vegie dish.

With this freezing cold weather the past few days, it was a comfort to snuggle up on the sofa with a book and a warm bowl of minestrone soup

Filet au poivre. Grilled steak with a pepper crust and green pepper sauce, beef broth, brandy and fresh heavy cream.

Anyone else making soup these days? I saved a can of San Marzano tomatoes for a special soup made with maple turkey sausage, spinach, corn and pasta coated in fresh Parmesan! Added onion and garlic powder, Italian seasoning and red hot pepper flakes to balance out the sweetness. It is like a Pasta e fagioli without the beans. Happy soup making!

i found a recipe for cinnamon rolls the other day and was compelled to make them for breakfast the next morning.

they remind me of the ones my mum used to bake for us when we were younger and living further south. she would line them up in trays and put them by the fire and we would all sit around them and watch them rise while we were drawing and painting on the floor. then later we would eat them straight out of the oven.

 

i love it when such simple things trigger such happy little memories.

Another recipe from My Baking Addiction this week. I was looking for something that could serve as an easy breakfast for the office and something that could double as Sweet Sunday and when I happened across this recipe, I knew I had a winner.

 

Plus, the only ingredient I needed to buy was the apples, which makes these a very cost effective treat!

 

I haven't tried one yet but my neighbour and friend, Bob, has assured me that they're delicious. He happened to stop by as they were coming out of the oven and said it was only fair that he did a quality assurance test and who am I to argue with that logic?

 

Recipe:

 

Ingredients:

For the muffins

2 1/4 cups of all-purpose flour

2 teaspoons of ground cinnamon

1 teaspoon of baking soda

1/2 teaspoon of kosher salt (since I was using salted butter, I skipped this ingredient)

1 egg

1 cup of buttermilk

1/2 cup of butter, melted

1 teaspoon of vanilla extract

1 1/2 cups of packed brown sugar

2 cups peeled, chopped Granny Smith Apples

 

For the Topping

1/2 cup of packed brown sugar

1/3 cup of all-purpose flour

¼ cup of rolled oats

1 teaspoon of ground cinnamon

3 tablespoons of butter, melted

 

Directions:

1. Preheat the oven to 375 degrees. Line 12 cup muffin cups with paper liners. Set aside.

2. In a large bowl, whisk together 2 1/4 cups of flour, ground cinnamon, baking soda, and salt.

3. In a small bowl, whisk together the egg, buttermilk, 1/2 cup melted butter, vanilla and 1 1/2 cups of brown sugar. Stir until sugar has dissolved.

4. Pour butter mixture into the flour mixture and stir until just combined. Gently fold in apples.

5.Use a large scoop to fill each muffin well, filling the cups to the top.

6. In a small bowl, stir together 1/2 cup of brown sugar, 1/3 cup of flour, rolled oats, and cinnamon.

7. Drizzle in 3 tablespoons of melted butter, mixing until well blended.

8. Sprinkle this over the tops of the muffins.

9. Bake in preheated oven for 25 minutes, or until the tops of the muffins spring back when lightly pressed.

10. Cool on wire rack. Store at room temperature.(I've thrown a few in the freezer, hoping they freeze well)

It's been so cold and damp lately so I decided a nice warm bowl of soup was in order. I usually use coconut milk in my soups but not this time. It sure hit the spot!

Collecting all the 'pieces' that go into a hearty soup; individual ingredients 'pieces,', many of which are cut into smaller 'pieces.'

I read that it's National Waffle Day...who's with me here?

Yes, occasionally I can and do make Apple Pie my main meal and dessert at the same time!

 

In the USA apple pie is a symbol for comfort. Actually apple pie has had many symbols over the years including that of patriotism in WWII.

I remember a commercial used many years ago that went "

"baseball, hot dogs, apple pie and Chevrolet". Supposedly these represent our culture.

  

"American as apple pie"

Exemplary or indicative of American life, interests, or ideals (often stereotypically so).

Here is a pot of ginger tea on the stove. It was simmered for hours with real ginger root in water. After it cooled. I added powdered Ginger, All Spice, Cinnamon, Nutmeg, Cardamon, Vanilla extract, and a dash of Cayenne. My Mother, of blessed memory, used Paprika instead of Cayenne. I often use Paprika, however, I saw Cayenne first today.

I think cameras from Canon, Nikon, Sony, etc, will evolve to keep up with the fabulous and innovative 2 lens camera of Apple's new iPhone 7 Plus. it is amazing! I believe it was invented by an Israeli company that Apple acquired.

I remember, before SLR film cameras were invented, the best cameras had two identical lenses, one for the viewfinder and one for the sensor, that was the film. Now the sensor is a chip or set of chips.
