Homemade pasta for my lasagna. We had a free day on Sunday, well I did, Deborah sat at her computer for a few hours of work related crap, so I decided to give pasta making a try, again. Before children, (BC) I would make it all of the time. And as some of you know, once you have kids, somethings are just easier to buy. I did make pasta once with Madison when she was young. It was not a disaster per se, but lets just say we did not do it a second time.

My favorite comfort food.
I live quite a distance from where they make the best burgers, so I had to learn to make them myself.
Ingredients:
Lemongrass Stalk, Dashi Powder, Shiro Miso, Garlic, Roasted Baby Portobello/Crimini Mushrooms, Nori Seaweed, Boiled Egg, Mozzarella Cheese, Toasted Sesame Oil, Ramen Noodles,
Wood Sorrel Leaves.
People come people go in this vintage one of a kind old diner in an industrial area. This gentleman blended almost a little too well. Popular and well-known this diner has been around for a very long time. The blue-collar workers lineup hungry and anxious for their fresh cooked hot meal. Some silverbacks Wander in Grab a table nurse a cup of coffee in a real mug then anxiously await their meal to then spend a whole lot more time just sitting and blending Till it’s time to disappear.

Made a tray of Spanakopita the other day,
It was so goods I ate it for 3 days:-)
Usually when I make the fillings for Cheese and Spinach pies I always have left over mix, I save it in the freezer for times like this when I crave something crispy and satisfying.
There are both mixes in this, more cheese than usual.
The chicken descended from above, arms stretched toward an unseen sky, as if caught in a dramatic final act. Suspended in midair, yellow feathers swirled around it like echoes of a lost past. Below, the stage was set—ripe tomatoes, fiery chilies, fragrant herbs, and the unmistakable scent of paprika, waiting to embrace their fated guest.

Tonight, Magyar paprikás csirke would be made with theatrical flair.

Last night I was preparing some of the fillings for the Christmas appetizers, always do some extra to store in the freezer for time of need, this time was our dinner,
I often do Spanakopita with puff dough or pie crust.
Ingredients:
1.5 (12 oz) cup Organic Unbleached All-Purpose Flour
250 ml warm water
1/4 tsp Pink Salt
1/4 tsp Yeast
Mix well ingredients until they are thoroughly combined.
Cover with plastic wrap and let stand at room temperature for 3 hours. Place in refrigerator till next day. Take out from refrigerator and let it sit at room temperature for 1 hours.
Transfer it to a well-floured surface and sprinkle dough with a little flour. Shape the dough. Place on a parchment paper-lined baking pan and cover with a towel. Let stand on counter top for 35 min. Place it in the oven and bake it for 30 minutes, or until the color turns golden brown.
Frische Waffeln - ein Duft von Kindheit
Ich erinnere mich noch genau an diese Sonntage bei Oma. Die Welt draußen war ruhig, aber in ihrer Küche herrschte ein ganz eigener Zauber. Noch bevor ich richtig wach war, lag dieser süße Duft in der Luft – warm, buttrig, ein Hauch von Vanille. Es war das Waffeleisen, das schon lange vor meiner Zeit seinen festen Platz auf dem Küchentisch hatte.
Oma stand am Herd, die Schürze umgebunden, den Teig mit geübten Händen gerührt. Sie hatte nie ein Rezept gebraucht – alles war Gefühl. Ich durfte manchmal den ersten Löffel Teig naschen, bevor er zischend auf die heiße Platte glitt. Dann warteten wir gemeinsam, bis die Waffeln goldbraun und knusprig waren. Herzform, natürlich. So wie ihre Liebe – weich in der Mitte, mit Ecken, die das Leben formten.
Wir saßen am Tisch, tranken Kakao, und stapelten die Waffeln wie kleine Schätze. Mit Puderzucker bestäubt, manchmal mit Apfelmus oder Sahne. Aber am schönsten war der Moment, wenn sie mir zulächelte und sagte: „Die schmecken nur so gut, weil du dabei bist.“
Heute, wenn ich selbst Waffeln backe, ist es nicht nur ein Rezept, das ich weitertrage. Es ist ein Stück Erinnerung, ein Stück Oma. Und mit jedem Duft, der durch meine Küche zieht, ist sie wieder da – für einen kleinen, kostbaren Moment.
About 65 years ago (circa 1952) this building was home to the first Dairy Queen in Ardmore. After a disagreement over franchising fees with DQ headquarters, Mr. Miller, who owned the Ardmore store, changed the name of his location to Dairy Freeze. Dairy Queen opened another store in Ardmore and Dairy Freeze eventually went out of business.The building remained vacant for years. Around 2012, a former executive chef named Jim, decided to open Jimmy J's Dairy Freeze in the original DQ building. He purchased the building and moved it a few blocks to its current location and opened up shop. He still offers many of the same items from the original Dairy Freeze menu plus some of his own culinary creations.

Opened in 1926 and the grill is still hot. While the facade has been all gussied up, the grub is down-home good. Not far off I-35 ..... don't forget to check out their pies.
Ingredients:
Barley Flour, Nutritional Yeast, Two organic Eggs, Milk, Yeast, Honey, Oil from Sun Dried Tomatoes Jar, Kalamata Olives, Muenster Cheese, Tomatoes Paste, Fresh Roma Tomatoes.

Decided to make some veggies in the Nuwave cooker tonight so I did some little red potatoes and brussel sprouts first for fifteen minutes then added green, red, orange and yellow peppers, two summer squash and then added some oregano, black pepper, crushed red pepper, seasoning salt and roasted garlic topped with olive oil and blended all together.
Cooked everything for another thirty minutes turning it at fifteen minutes.
Oh boy, just the smell of it all cooking made me want to eat the furniture but I managed to hold off until it had finished cooking.
I must say that this combination of vegetables are some of the best tasting that I have ever made. (:>)
Been working on my pizza skills for the last week. Steep learning curve and it can be a humbling experience at times! I have high respect for the "old school" pizza masters. This was cooked with a combination of coal and wood. Some of my best childhood memories were going to a pizza joint and the owner speaking only Italian and tossing his pies in front of a window so people walking by could see his masterful skills. Oh, how I miss those days!
It's not homemade, but it's MM, MM good.

This is one of my all-time favorite dessert drink concoctions.
First pour some heavy cream into a cup. Then add about four or five times that amount of prune juice into the cup. Add freshly whipped heavy cream on top. (I didn't add whipped cream in this photo because I loved the bubbles) Then take pictures. And then sip and savor. It is so delicious! If you would like, you can add brandy. I can't because alcohol affects my heartbeat erratically.
If you add a whipped cream topping, you will need a spoon to drink it.

This is very easy to make and it can be used with anything,
Today it was on the cold side so I decided to make some hardy chicken soup with tenders and rice, I had some dough in my refrigerator that it was turning sour ( Thats not bad we bakers use sour do for making bread,
I know people that their grand Mother brought starters from Europe over 100 years ago and still in use,
I just added some black pepper and oregano and put it on the skillet with touch of vegetable oil.
Turkish people in my home town in Greece used similar pitas for their holiday and we as kids went to all our neighbors houses and gave us pitas and baklava.
P.S you can put some cinnamon sugar on top and it tastes better than donut,
