We haven't had much time to cook lately so it was nice to be home on a Friday night and trying out a new recipe - Chicken Thighs in Spicy Tomato-Pepper Sauce. The sauce was easy and delicious (and not really spicy at all), and it's basically sauteed peppers, onions and tomatoes which are then pureed with some piment d'espelette. What really makes it though is the addition of a caramelized brown sugar/vinegar reduction which brought both depth and sweetness to the pepper puree. I love the vibrant colors of the peppers. We'll definitely be adding this dish to our repertoire.
