It's been a while since I've cooked pasta. This is very similar to the last one I made - Spaghettini with Chorizo Sausage and Mushrooms in Tomato Sauce.
The sauce was made from scratch, starting with stewed tomatoes, garlic, oregano, and other spices. I let is simmer for a couple of hours, developing a deep rich flavour before adding mushrooms and chorizo sausage. Delicious!
