I tider av Coronapandemin så blir det till att vara hemma. Vad passar inte bättre då än att laga lite god mat och fylla frysen med godsaker.
Arugula Salad
4 C. young arugula leaves, rinsed and dried
1 C. Cherry tomatoes
¼ C. pine nuts
2 Tablespoons olive oil or grapeseed oil
1 Tablespoon rice vinegar
salt to taste
1 large avocado, peeled, pitted and sliced
1 mango, peeled and sliced
In a large plastic bowl with a lid, combine arugula, cherry tomatoes, pine nuts, oil and vinegar. Season with salt and pepper to taste. Cover, and shake to mix.
Serve salad with sliced fruit.

Make mashed potatoes
For the meat filling:
2 Tbsp oil
1 cup chopped onion
1 package sliced mushrooms
1 package frozen mixed vegetables (any mix will do: peas, carrots, corn, broccoli…), cooked
1 lb faked ground meat
chopped thyme leaves and parsley
salt and pepper
In a frying pan, place the oil and sauté the onions. Add the mushrooms and sauté a couple of minutes. Add the fake meat, sauté an additional 2-3 minutes. Add the vegetables and the spices.
In glass baking dish, spread one layer of mashed potatoes.
Top with filling mixture and another layer of mashed potatoes.
Bake 15 minutes to warm up before serving.
I made udon for the 1st time. I didn't have that much ingredients on hand, so the egg variation was the easiest to make. But I had a really hard time eating it because the egg wasn't cooked enough for my tastes. I thought the soup was hot enough to cook the egg when I mixed it. The thought of eating a mostly raw egg didn't sit well with my stomach.
• Momofuku brand packaged noodles (also known, to me, as “fancy ramen”)
• wild-caught Gulf shrimp, boiled
• leftover crawfish boil corn from the cob
• homemade chili-garlic sauce made by Blythe, girlfriend of my good friend, Dave
Tenderstrip slices, red wine sauce, broccoli and potato cakes with Västerbotten cheese, chives and such.
Delicious dinner, mainly due to the company.
A family friend made us a pan of lasagna for last New Year, Jan. 1, 2024. It was damn good and the leftovers went quickly. Hope everyone who celebrates does so with a great meal.
After work on a Friday, isn't it nice to come home to find someone cooking a meal and looking forward to sharing it with you?
Made this stilton tart with the aid of Frozen Flacky pastry which i defrosted and then made the edging round the side. Mostly bake cakes but really pleased with the results of this. Recipe was in this months waitrose magazine
My wife have made some pickled red onions today for some burgers. Just love the colours, and tasty too ....
