For Macro Mondays - Bread and Topping

Vegetable and Tofu Curry

 

1 cup long-grain white rice

2 tablespoons canola oil or olive oil

1 14-ounce package extra-firm tofu, drained and cut into 3/4-inch cubes

1 cup carrots, cut into 3/4-inch pieces

2 cups potato pieces (steam small potatoes and peel)

2 cups cauliflower florets

1 cup peas

1 onion, thinly sliced

1 clove garlic, minced

1 Tablespoon curry powder

1 tablespoon grated fresh ginger

2 tablespoons tomato paste

1 to 2 cups low-sodium vegetable broth

2 cups frozen okra

1/2 cup torn fresh basil leaves (or parsley)

1.Steam the cauliflower, the peas, the carrots the okra and the potatoes

2.Meanwhile, heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add the tofu and cook, tossing occasionally, until golden, 4 to 5 minutes; transfer to a plate.

3.Heat the remaining tablespoon of oil in the skillet. Add the onion, curry powder and ginger and cook, stirring occasionally, until onions begin to soften, 3 to 5 minutes. Mix in the tomato paste.

4.Add the broth to the skillet and bring to a simmer. Add the tofu and the vegetables. Sprinkle with the basil and serve over rice.

A fun entry for the Macro Mondays theme "Dots and Stripes" ...

When I shot the original, I had not read the theme for the week. A much larger image has been severely cropped to fit the requirements, so it is not very sharp. There are many size Parmesan cheese and Ricotta cheese dots on the striped Rigatoni.

Note, the Rigatoni open end appears as an elliptical dot. The ramekin itself has stripes in the glass of multiple sizes.

This was my attempt at a rustic farmhouse shelf recreated in the studio. All of these are what's present in our basement pantry, we made a huge effort to preserve a lot of produce this year. Tinned sardines in tomato sauce on toast (spread with a thin layer of hot English mustard), topped with finely diced shallot, rehydrated wakame, and the sauce from the tin, highlighted with a bit of lime juice and a splash of Maggi.

Bleak weather outside, so time for a bit of table top photography. I have been thinking of doing this shot for a while.

Negli anni Trenta, la ditta di prodotti alimentari Cirio indisse un concorso nazionale per trovare un nome italiano che indicasse il ketchup; vinse il nome salsa rubra, ancor oggi usato come sinonimo.

 

Ketchup

One prominent theory is that word came to English from the Cantonese "keh tsup" (茄汁 ke2 zap1, a shorterned version of 蕃茄汁 faan1 ke2 zap1 "tomato sauce; tomato juice" or catsup, is a table sauce.

Traditionally, different recipes featured ketchup made of egg white, mushrooms, oysters, mussels, walnuts, or other foods, but in modern times the term without modification usually refers to tomato ketchup, often called tomato sauce or red sauce (in Northern Ireland).

It is a sweet and tangy sauce, typically made from tomatoes, a sweetener, vinegar, and assorted seasonings and spices. Seasonings vary by recipe, but commonly include onions, allspice, cloves, cinnamon, garlic, and sometimes celery.[

Zutaten für die Sauce:

Tomaten

Butter oder Olivenöl

Zwiebeln und/oder Knoblauch

Salz und eine kleine Prise Zucker

Schwarzer Pfeffer aus der Mühle

Falls vorhanden, frischer Basilikum, ansonsten getrocknete, italienische Kräutermischung

 

Zubereitung:

Butter oder Olivenöl in die Pfanne geben und erwärmen.

Zwiebeln und Knoblauch schälen, klein Schneiden und in die Pfanne geben. Alles glasig Dünsten.

Tomaten würfeln und dazu geben.

Falls kein frischer Basilikum verfügbar ist, etwas von der italienischen Kräutermischung hinzugeben.

Mit Salz, Zucker und Pfeffer abschmecken.

Alles kurz köcheln lassen und am Schluss den frischen Basilikum darunter mischen. FERTIG ;)

Oh, die Spaghetti nicht vergessen .. lach !!!

 

Ingredients for the sauce:

Tomatoes

Butter or olive oil

Onions and/or garlic

Salt and a small pinch of sugar

Black pepper from the mill

If available, fresh basil, otherwise dried Italian herb mixture

 

Preparation:

Add butter or olive oil to pan and heat.

Peel and chop the onions and garlic and add to the pan. Sauté until translucent.

Dice the tomatoes and add them.

If fresh basil is not available, add some of the Italian herb mixture.

Season with salt, sugar and pepper.

Let everything simmer briefly and mix in the fresh basil at the end. DONE ;)

Oh, don't forget the spaghetti ... laugh !!!

 

Ingredientes para la salsa:

Tomates

Mantequilla o aceite de oliva

Cebolla y/o ajo

Sal y una pizca de azúcar

Pimienta negra de molinillo

Si está disponible, albahaca fresca, si no, mezcla de hierbas italianas secas

 

Preparación:

Añadir mantequilla o aceite de oliva a la sartén y calentar.

Pelar y picar la cebolla y el ajo y añadirlos a la sartén. Saltear hasta que estén transparentes.

Cortar los tomates en dados y añadirlos.

Si no dispone de albahaca fresca, añada un poco de la mezcla de hierbas italianas.

Sazonar con sal, azúcar y pimienta.

Cocer a fuego lento brevemente y añadir la albahaca fresca al final. LISTO ;)

At the Shoe Bar, Yagan Square, Perth

All these delicious ingredients go into the making of my homemade tomato sauce. We grew the tomatoes and some of the peppers in our vegetable garden. This is one of my favorite things to do. The kids call this "Mom's Famous Tomato Sauce." LOL!

Passierte Tomaten erwärmen und mit Knoblauch, Oregano, Majoran, Salz und Pfeffer abschmecken.

 

Salamischeiben kurz anbraten und in die Sauce geben.

 

Pasta al dente kochen und mit der Tomatensauce vermischen.

 

Geriebenen Käse über die noch warme Pasta geben.

Fertig!

When my DD was in elementary school, one of the after school activities was at a local church and the parents were urged to volunteer to lead activities or cook. So what do you create for 75+ kids for dinner? Mini pizzas! With an English muffin, grated cheese and tomato sauce, easy peasy and tasty. It’s best in an oven or toaster oven but I like mine in a microwave with a bit more cheese on top. You could also add pepperoni or other toppings, cut into small sized pieces.

 

The macro mondays theme for this week (8/1) is “bread and topping”.

Some freshly poured Beans for the Macro Mondays Main Meal Theme. Sometimes, on easy days, Beans on Toast with loads of butter on the toast and a nice cup of tea! A Classic Main Meal when you're young!
