Shandong cuisine (鲁) is not well known outside of China, although it is probably one of the most important one, as this is the vein that heavily defines the taste of the north of China, with its emphasis on delightful savouriness. This is the taste that crafted the ancient Imperial cuisines, gave rise to dishes that would be served at officialdom and cast a long shadow on modern Beijing offerings.
