This Homemade Cheesy Chili Mac Skillet has two secret ingredients that make this the BEST cheesy chili mac skillet you are ever going to eat! I promise!

Have I ever told you how many chili contests I have been a food judge for? Probably not, because I honestly have lost count. I have eaten SO MANY CHILI’S in the name of Edmonton food goodwill that I can barely make chili at home anymore.

Well, not quite, but you get my drift. The bonus to eating all that chili is that I got to look at the recipe’s for allllll those amazing chef’s chili’s – and you want to know what I have learned?

The winning chili almost always has ketchup in it.

That’s the first secret ingredient to making the best cheesy chili mac skillet.

Ketchup.

I kid you not my friends, the best chefs in Edmonton would use ketchup in their winning chili’s time and time again. It’s the sweetness that cuts through the acidity of the tomatoes that does the trick, something that I will mention on every tomato recipe on this website.

The trick to a superb tomato based dish is a bit of sugar to cut the acidity. It can come in the form of ketchup or sugar, take your pick. I prefer to use ketchup and reap all the flavour benefits but I’ll also throw in a teaspoon or so of brown sugar when I don’t have ketchup handy.

If you see a tomato based dish like my homemade cheesy chili mac skillet and it doesn’t have sugar or ketchup, add some. Just a bit, a teaspoon or two of sugar will do – and usually a 1/4 cup of ketchup will amp up the flavour if ketchup works in the dish.

Your cooking world will be all the more amazing for it.

Secret ingredient #2 for my homemade cheesy chili mac skillet?

Velveeta cheese, of course.

You would be surprised how little Velveeta is needed to make the best chili mac. Not only that, we used one cup of Velveeta, cubed, and we didn’t need cheese on top.

You can of course, top this with cheese, but I was amazed at how adding just that one cup of Velveeta made it just cheesy enough. I garnished it with parsley, skipped the shredded cheese and it was perfect for our palates. The Velveeta cheese does this wonderful job of melting seamlessly into the chili mac skillet, thickening it up sooooo perfectly. You will also save a ton of calories if you leave the cheese off, if that’s your wish.

Let me tell you, this cheesy chili mac skillet is on the permanent dinner rotation list – the kids loved it!

Homemade Cheesy Chili Mac Skillet

Description

This homemade Cheesy Chili Mac Skillet is one of my family’s new favourite meals! The addition of my two secret ingredients ( Veleeta & ketchup) makes ALL the difference!

Ingredients

1 lb lean ground beef

1 cup of white onion, diced

1 tbsp diced garlic

1 ( 540 ml) can of petite diced tomatoes – if you can find the chili flavoured ones, they are the best

1 (15 oz) can of kidney beans, rinsed and drained

1/2 cup ketchup

4 cups of beef broth

1 tbsp chili powder ( or to taste)

1 tsp paprika

1 tsp oregano

2 tsp cumin

1 tsp salt

3 cups of dry elbow macaroni (one 454 gram box)

1 cup of Velveeta cheese, cubed

1-2 cups of shredded old cheddar cheese ( optional)

green onions and parsley to top

Instructions

In a large lidded skillet OR large lidded pot, fry the ground beef and onion until the beef is no longer pink and the onions are soft and translucent.

Drain the fat then sautee the garlic for two minutes.

Stir in the tomatoes, beans, ketchup, broth and spices. You can also use 2 tbsp of my homemade chili mix instead.

Once those are incorporated, stir in the dry macaroni. Cover with a lid and simmer on low for 10 minutes, stirring every once in a while to make sure the macaroni doesn’t stick.

Once the noodles are al dente and the liquid has mostly evaporated, remove from the heat and stir in the Velveeta. Cover again for 5 minutes to let the cheese melt.

Stir the now melted cheese throughout the pasta and serve topped with cheese, green onions or parsley.

Notes

My Homemade Chili Mix is perfect in this recipe! Just use 2 tbsp of it instead of all the spices!

Rosemary & Thyme Potatoes in Foil Packets by Ruby Parry

These Rosemary & Thyme Potatoes in Foil Packets were an accidental recipe that happened when we were at the lake! I had extra potatoes leftover from my Shrimp & Potatoes in Foil and knew my son wouldn’t touch anything with shrimp in it. I threw these together and voila! A delicious new camping recipe was born!

If I had to pick a favourite carb, potatoes would win, hands down. And potatoes in foil packets while camping? Double win.

I’m sure it’s because of my Slavic roots – we make perogies, we drown new potatoes in dill and cream ( check out my Ukrainian Style Creamed Dill Potatoes recipe for that!) and generally love ourselves a good potato recipe.

This actually DID come about because Mike and I indulged in those amazing Lemon Garlic Dill Shrimp & Potatoes in Foil Packets and had leftover potatoes. My kids are total weirdos and don’t eat seafood much to my chagrin and it’s actually taken me years to get Mike to even eat shrimp.

They are all a work in seafood progress, my friends.

These rosemary & thyme potatoes in foil packets were scarfed up SO fast by both kids. My daughter of course, picked off the rosemary and thyme (I just can’t win) and my son ate them as-is. You can make them on the campfire, BBQ or even the oven if you like! Using tin foil makes everything such an easy clean-up as well!

Description

These Rosemary & Thyme Potatoes in Foil Packets were an accidental recipe that happened when we were at the lake! I had extra potatoes leftover from my Shrimp & Potatoes in Foil & I threw these together and voila! A delicious new camping recipe was born!

Ingredients

1 lb of red potatoes

1/4 cup olive oil/canola oil

3-4 sprigs of fresh Thyme

2 tbsp fresh rosemary leaves

sea salt and pepper to taste

Instructions

Toss together all ingredients.

Lay two layers of tinfoil over each other.

Place the potatoes in the middle of the tin foil in a long mound.

Bring the tinfoil together and seal/

Cook for 30-40 minutes on the campfire or BBQ, shaking occasionally.

Cook until the potatoes are fork tender. Serve and enjoy!

Notes

You can customize these potatoes easily! I love rosemary so you will usually catch me adding more!

Everyone needs a fabulous Teriyaki Marinade recipe in their cooking life. I don’t like to always use the words “The BEST’ when it comes to a recipe, because that gets boring when you see it over and over and over from every food blogger out there, but there are about ten times on this website that I have. When I do, let me assure you, the recipe is always the best that I have ever tasted! With that said, this actually is THE BEST Teriyaki Marinade Recipe!

This all came about thanks to my need for a Copy Cat Red Robin’s Teriyaki Chicken Burger. I actually hadn’t tried the burger, I was just craving a chicken teriyaki burger and remembered seeing it on the menu one time.

Then I realized that I don’t actually have a tried and true teriyaki marinade recipe. Bear with me, my children are just venturing into the land of normal eating, so teriyaki marinade isn’t really something I worried about before.

Thanks to the burger however, I now have an excellent teriyaki marinade that I will use time and time again!

Those are my chicken burgers marinading for the burgers, which by the way ARE AMAZING! I pounded them flat, marinated them and wowza. You could have eaten these plain without turning them into a burger.

Holy Dinah you guys, these babies were the best burgers I ate all summer. Even my son ate them ( the renowned chicken hater) and couldn’t stop telling me how awesome they were.

This is seriously the BEST Teriyaki Marinade you will ever try! It makes amazing chicken every time!

Ingredients

1 cup water

1 cup of soy sauce

1 cup brown sugar

1 tbsp chopped fresh garlic

1 tbsp Worcestershire sauce

1/2 tsp onion powder

1/2 tsp powdered ginger

Instructions

Combine all ingredients together in a large sauce pan. Bring to a boil, and let boil for 3-4 minutes. Remove and cool. Marinate meat of choice in it for a few hours, then cook as you choose.

I'm currently using a private beta of Omniweb 5.5, and Omnigroup have allowed beta testers to talk about it. It has 4 things I was hoping for:

1. Updated to use WebKit instead of Webcore. This is currently using a newer version of WebKit than Safari. This means that sites like Flickr finally work in OW - a big reason for me not using it in the last year.

2. Unified toolbars. Small UI improvement, but a good one.

3. Access to the Webkit Web Inspector

4. Ability to specify custom style sheets per site. OW has loads of per-site preferences that can be set, but not CSS, until now. It works fast too - as soon as you've selected the CSS file, it updates the view automatically. Just per-site javascript missing now.

Most of all, the move to WebKit means that its fast. I would say as fast as Safari (but not Camino). I'm currently using this as my default browser with a surprise (to me) smattering of Firefox. It feels like Omniweb is great again.

Some things remain a mystery though, so it's hard to tell what's really going on. The economy has been "recovering" much slower than historically. Why is that? Job growth has been very anemic, and the only reason the unemployment rate isn't worse is because so many people have left the labor force altogether. Is that natural for this moment in history, or is it a result of the weak economy or government policy? During the Reagan recovery of the 80's, they'd have like 800,000 new jobs created a month. Nowadays we're lucky to break, even though the population of workers and jobs is substantially larger by now.Meanwhile the continued fiscal deficits since took office are huge and unprecedented, and there's no sign of them ending. (And you also have to put blame on the tail end of the Bush administration if we blame presidents, but the problem continues after 4 years of.). RIGHT NOW the debt is manageable, but if we don't contain it someday that will become a problem. Little remembered fact is that Bush NEARLY had achieved a balanced budget by the end of 2007 ... so how come just a few years later we're unable to reduce the deficit below $1 trillion, year after year?There is an old saying that begins with a question: How do you tell if what is going on is a recession or a depression? Easy. When the other guy is unemployed, it is a recession. When you are unemployed, it is a depression. At this moment in time, whether we are in good or bad times is in the eye of the beholder. To an auto worker, it is boom times. The industry is having a great year. To a home builder, it is a depression. The market is stagnant. As for the rest of us, it goes to the question I asked. Are you employed or unemployed. The answer will be directly related to personal status.Optimism is rising. Check the graphs for that. Buying is beginning to increase in major areas of the economy. Only for the Tea Party are things terrible even while they sit in their mansions in relative comfort. They want out of office and no matter how good things get, they will see the world as a mess until the get their goal or get dumped by the tides of history.

1° GIORNO: SIENA

Arrivo nel primo pomeriggio a Siena. Circondata dai boschi del Chianti da un lato, delle

crete dall’altro, la città sembra adagiarsi su una collina, non alta, in posizione centrale

rispetto alle terre da sempre dominate. La famosa città del Palio e delle contrade

affascina per i mille colori delle sue bandiere, per i suoi vicoli tortuosi, per la perfezione

dei suoi monumenti gotici, per la fama dei suoi illustri figli e per la bontà dei prodotti che

vi si possono degustare. Visibile da ogni parte dei dintorni, l’altissima Torre del Mangia

domina Piazza del Campo, centro della città da cui si diramano le strade per il Duomo,

S. Domenico, Santa Caterina, Piazza Salimbeni, Via di Città, Porta Romana.

Trasferimento in una località nella provincia di Firenze, sistemazione in fattoria o hotel,

CENA AL BARBECUE, pernottamento.

2° GIORNO: CASTELLINA CHIANTI - COLLE VAL D’ELSA – VENDEMMIA

Prima colazionel. Nella mattinata partenza per la strada del Chianti. Il vino in cui gli

esperti individuano il sentore di viola mammola, si fa di uve Sangiovese, di uve Canaiolo

nero, Trebbiano toscano e Malvasia del Chianti. Nel paesaggio severo a volte, o tenero,

che compone sempre variando con sapienza di vedutista macchiaiolo la villa, il casale,

il leccio, la macchia, il borgo, la torre, il declivio del colle, la svolta della strada, la pieve,

la quercia, il cipresso, l’ulivo, si inserisce frequente il vigneto, non prevaricante peraltro

masolo in privilegiati siti per solatio e composizione del terreno. Si visiterà Castellina in

Chianti: il vecchio comune e le sue mura.

Proseguimento per Colle Val d’Elsa: cittadina agricola ed industriale, posta su un colle:

il Palazzo Campana, il Castello, il Palazzo Pretorio, il Museo Civico, il Museo Archeologico,

il Duomo, il Palazzo dei Priori, la Chiesa di S. Agostino. Pranzo in ristorante. Pomeriggio

partenza per la fattoria e:

Vendemmia con percorso storico e festa della vendemmia

15.00 – 17.00 vendemmia - 17.00 – 19.00 percorso storico con degustazione

Cena a buffet con musica festa della vendemmia. Pernottamento.

3° GIORNO: FIRENZE

Prima colazione e partenza per Firenze capitale dell’arte della Toscana, si visiterà:

Piazza Duomo, Piazza della Signoria, Galleria degli Uffizi, Palazzo Vecchio, Campanile

di Giotto, Ponte Vecchio. Durante le visite sosta in ristorante. Nel pomeriggio breve

visita della città.

DESCRIZIONE FATTORIA

La Fattoria è un antico insediamento fortificato del 12° secolo a mezza costa nella piccola

valle del torrente "Mulino delle Rivolte", a 15 Km da Firenze.Ricchissimo di storia e proprietari illustri, è una casa torrita con vari annessi del patrimonio

avito della nobile famiglia Ricasoli Zanchini, già detta "Da Castiglionchio di Firenze". Da

questo castelletto prese il Casato il celebre giuriconsulto Lapo da Castiglionchio.La torre ed il palazzo, tuttora superstiti, mantengono le due bellissime porte castellari. In

questa stessa torre abitò Messer Lapo e qui conservava i contratti e le pergamene della

sua famìglia.La Fattoria si trova soli 15 km dal Centro di Firenze, città ricca di arte, cultura e storia,

immersa nel caratteristico paesaggio toscano tra vigneti, uliveti e circondato da dolci colline.

Gli appartamenti sono realizzati nel caldo e romantico stile rustico toscano: pavimento in
