super easy but kind of a pain to work the dough into the right consistency....then again I was using extra dry white cheddar today and it was frozen.....so that might have something to do with it!
ingredients
1/2 cup room temperature butter
1/2 pound coarsely grated sharp cheddar cheese
1/8-1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1 1/2 cups sifted all purpose flour
enough pecan halves to put one on each (about 2 cups whole)
Beat the butter until fluffy, add the cheese, small portions at a time....then switch to mixing with a hard spatula sift salt, pepper and flour into the butter in 3 groups...the last group I am usually mixing with my hands...form into a ball and divide ball in half, roll each half out between plastic wrap into a long 1" diameter log....stick in the fridge for at least an hour.....can last days.....then slice into 1/2 inch thick slices with a serrated knife, turning log 1/4 turn after every cut......butter a nonstick pan or use a silpat and bake at 325 10 -12 minutes, remove from pan with a spatula and let cool completely on a wire rack before packing up

Crispy wafers with 80.5% fine milk cream and 19.5% black wafersheet. 1.1% cocoa.
Smell: wafer, milky. Nothing great. Milky, very sweet, greasy cream. Weird tasting wafer.

Necco Wafer hoodie from Twist Collective. Knit in Vinnni's Colours Bambi, which is a lovely baby friendly yarn. I omitted the sleeves and knit the body in the round up to the arms. My first item of baby knitting complete
It was cold that day...but we felt like ice cream. I had mint choc chip and coffee, I think. Blai had banana and wild cherry. Not the best ice cream in London but perhaps the best mint choc chip.

The rotating wafer support maintains flatness and position of 4", 6", 8", 10", 12", and 13.625" diameter wafers in order to achieve contamination-free contact angle readings while preserving flatness. Each wafer support is hand lapped to a high-tolerance. The support incorporates a rotating stage plate which is graduated in 1° increments with displacement holes for creating the appropriate suction. The wafer support mounts directly to the leveling stage of the Contact Angle Goniometer. Model 400 supports and includes an 8" wafer support (and other sizes can be added). Models 190, 200, 250, and 290 support the 4" wafer support only. Larger supports may require an upgrade kit which will extend the focal length of the camera and extend the microsyringe fixture. We offer kits which include all of the necessary parts.

We buy the Garden brand wafer cookies at the Nam Hai Asian supermarket in east Tulsa. These wafers are delicious and not overly sweet. Just perfect, I think, with a cup of hot tea or coffee.
