The Tunnock's Caramel Wafer, correctly known as the Tunnock's Milk Chocolate Coated Caramel Wafer Biscuit, is a bar consisting of five layers of wafer, separated by four layers of caramel. The bar is coated in chocolate, made from cocoa and milk solids. The wafers are wrapped in red and gold coloured foil. Dark chocolate wafers, wrapped blue and gold, are also available.

The rotating wafer support maintains flatness and position of 4", 6", 8", 10", 12", and 13.625" diameter wafers in order to achieve contamination-free contact angle readings while preserving flatness. Each wafer support is hand lapped to a high-tolerance. The support incorporates a rotating stage plate which is graduated in 1° increments with displacement holes for creating the appropriate suction. The wafer support mounts directly to the leveling stage of the Contact Angle Goniometer. Model 400 supports and includes an 8" wafer support (and other sizes can be added). Models 190, 200, 250, and 290 support the 4" wafer support only. Larger supports may require an upgrade kit which will extend the focal length of the camera and extend the microsyringe fixture. We offer kits which include all of the necessary parts.

This week I decided to try to create a cupcake all on my own. Yikes...pretty much up to now I have followed someone else's recipe to the letter. I put some more thought into how I could create a Banana Pudding Cupcake and here's what I came up with. Check out my blog, 52 Cupcakes, for the recipe.
My mother in law and I make cookies at Christmas!
This year we tried these, a wafer type with colorized icing. They weren't so great. Maybe the cookies are under cooked, the icing was a little funny too.
I'm going to cook these up this year somet ime if I don't forget, test out a few alternatives. They were very plain, tasted like diet cookies but they weren't sugar free.
They look nice in the bowl though.

First read about it in The Wednesday Chef.
This recipe is quite sweet; I tried cutting some of the sweetness by brushing the tops with bitter chocolate. Will have to experiment a bit to see if adding other nuts also helps.
(Is is just me, or does that book cover remind anyone else of pimento-stuffed olives?)
