This evening I will peel and chop these vegetables and tomorrow they will spend the day in the slow cooker with a can or two of tomatoes. Tomorrow evening I will get home to old fashioned vegetable soup.

When camping it is invigorating to have fresh grilled vegetables - color and zest. Fresh oregano from my garden, scallions, onion, zucchini, sweet bell peppers, tomatoes. Just a bit of olive oil, and an Italian marinade will bring out all the flavor.

Turnips, red beets, chard, kohlrabi,zucchini, cucmbers, broccoli.

One of the dips is anchovy sauce.

The other is a mixture of mayonnaise and two types of Japanese seasoning, yuzu-kosho and ponzu-shoyu.

Yuzu-kosho is a paste which contains yuzu (a kind of citrus), chilli and salt. Ponzu-

shoyu is a citrus seasoned soy sauce.

Sometimes I'll roast a huge pan of veggies in my convection oven and I always have leftovers so I put the veggies in an omelet for something different.
