Chicken Thigh and Rice Biryani with Green Peas, copy space for your text

freshly made bread crumbs. a dozen eggs, half pound of seasoned cooked lamb, soft cheese, fried potato cubes, parsley and cilantro. seasoned with tumeric. no relation to moroccan tajine, a sort of stew.

-1 package boneless skinless chicken breast or thighs

-1 onion chopped

-1 red bell pepper diced

-1 diced carrot

-1 zucchini diced

-1 cup green peas

-2 T shredded coconut

-2 T almonds

-1/4 c. biryani sauce

-2 T garlic

1 T minced ginger root

-dash each of molasses, datil pepper sauce, red pepper flakes, tumeric

-pot of steamed brown rice cooked with some tumeric and coconut in the water (cheap-o saffron rice)

 

Sautee the onion, ginger, and garlic in olive oil until soft. Add chicken pieces and continue to brown 5 mins. Then add other diced vegetables. Add 1/4 cup water and the biryani sauce and other spices, allowing to simmer about 10 mins.

 

When rice is done, pan out into greased casserole dish. Cover with the chicken and sauce when cooked through. Bake all together for 30 mins at 350 degrees.

 

Excellent if you include cauliflower and plumped raisins (I didn't have any on hand) and top with plain yogurt. Spicy and sweet.

I always like to try making something myself, at least once. This time it's the spice blend garam masala. The hardest part was just collecting the spices, as some of these just aren't commonly available in the town I live.

 

I based my recipe on the one I found here. I doubled it and used half the cloves, as I'm not a cloves fan.

 

1 2" Cinnamon Stick (about 1 heaping tsp broken)

2 Bay Leaves, broken

3 tablespoons Green Cardamom Pods

2 teaspoons Fenugreek Seeds

1 tablespoon Whole Cumin Seeds

1 tablespoon Whole Coriander Seeds

1 tablespoon Black Peppercorns

1/4 to 1/2 teaspoon Whole Cloves

1 teaspoon Blade Mace

 

Preparation Instructions

 

Break the cinnamon sticks into pieces. Crumble the bay leaves. Heat a heavy frying pan and after 2-3 minutes put in the whole spices. Dry roast over medium heat until the color darkens, stirring or shaking the pan frequently to prevent burning. Burns very easily! Leave to cool, then grind. I used a small coffee grinder that is reserved just for spices.

 

Apparently stored in a airtight jar this will last 3-4 months. I'm giving some away to friends to be sure it all gets used up by then.

 

I didn't do this yet, but the recipe said: "you can add 2 teaspoons of ground tumeric after grinding to add a golden color and/or add 1/2 to 1 teaspoon ground ginger to give some heat, or to taste."

 

The bride's mother is sprinkling tumeric powder on her daughter and son-in-law's hands here as their fingertips meet.

Blend all these organic ingredients in a #Vitamix then top with 1 Tbs raw cocoa nibs.

I have a recipe for some amazing indian Chilli sauce and these are the ingredients before "assembly" the only missing one is tumeric.

To combat the sads last night of being back in my apartment by myself, I decided to set out on a culinary endeavor and try this "life changing" loaf of bread and a delicious dinner of kale/tumeric/chicken/mashed avocado.

 

Both *actually* turned out pretty decently, and I'm pretty excited about this bread. It's GF *and* vegan and the recipe is really flexible and allows for a fair number of substitutions (pan type, seeds used, sweetener used, etc.) so although I've only eaten a tiny slice, I highly, highly recommend. Is super easy, too!

Ann made these sort of shockingly lovely eggs, dyed with tumeric, red cabbage, and red wine.

Simply-the best bowl of "Mì Quảng" in Chicago.

Green Mint. Green Cilantro. Green Scallions.Red Cabbage.Sprinkle of Crispy Shallots.Sprinkle of Chopped Peanuts.

OMG- So Good.....and- did I mention it's

only US $5.95- for this Big Bowl of YUMMMM!???!

In further exploration of indian cuisine, I made a 4-5 serving batch of Chana Masala, A northern indian chickpea curry. I thought it was delicious and definitely hearty.

 

Recipe:

 

1 can chickpeas (garbanzo beans)

1 can diced tomato

1 potato, cubed

1/4 cup chopped cilantro

1/2 onion, diced

2 clove garlic, minced

1 tablespoon vegetable oil

1 tablespoon ground corriander

1/8 teaspoon cayenne

1/4 teaspoon ginger

1/4 teaspoon cumin

1/4 teaspoon tumeric

1/2 teaspoon garam masala

1/2 teaspoon paprika

1/2 teaspoon salt

2 cup water

2 cup milk

 

Sautee onions and garlic in oil in a large pot for a few minutes, then add the rest of the ingredients and bring to a boil, then cover and lower the heat to a simmer for 30 minutes stirring occasionally, then serve and enjoy with rice or bread.

coconut 1 cup

chicken stock 1 cup

red curry paste 1-2 tsp

yellow curry powder (or tumeric powder) 1 tsp

fish sauce 1 Tbs

white sugar 1 tsp

all boiled in medium heat , add cooked chicken pieces or shrimp and simmer for few more minutes.

 

pour above coconut curry soup into cooked egg noodles in a bowl

coriander or spring onion to garnish

(sprinkle few drops of chilli oil if have any)

1 lb elbow macaroni, cooked

1 red bell pepper, seeded and chopped

1 green bell pepper, seeded and chopped

4 scallions, sliced thin

½ cup cooked corn

1 cup black beans

2 tablespoons cider vinegar

1 teaspoon hot sauce

1 teaspoon chili powder

1/8 teaspoon garlic powder

1 pinch cayenne pepper

1 cup vegan mayonnaise

1/2 cup barbecue sauce

salt & pepper

EVOO

 

Sprinkle a little olive oil on cooked pasta to prevent sticking and transfer to large bowl.

Stir in bell peppers, beans, corn, scallions, vinegar, hot sauce, chili powder, garlic powder, and cayenne pepper, and let sit until flavors are absorbed, about 2 minutes.

Stir in vegan mayonnaise and barbecue sauce and refrigerate an hour or so.

 

BarBeque sauce: In a sauce pan, mix together ½ cup tomato paste with ¼ cup pineapple juice, 2 tsp agave syrup,1tbsp liquid smoke, ½ tsp mustard, and ½ tsp tamarind paste, a dash of turmeric and a squirt of lemon. Stirring often, bring to a boil and then remove from heat.

 

Exotic flowering spikes of Curcuma - a far eastern plant whose rhizomes are used as a scource of spices such as tumeric.

I had a packet of silken tofu in the fridge that needed to be eaten,

so this morning I made "scrambled tofu". I googled some recipies, and

the *worst* looking one said: soy, tumeric, garlic powder, onion

powder, salt and pepper. Ew, Ew, Ew. What's wrong with using real live

onion and garlic?

 

So here I have:

1. packet silken tofu (I think 90g)

2. One purple eschallot sliced,

3. Green garlic shoots - about 1 tbs

4. tumeric - 1/2 tsp

5. splash of tamari soy sauce

6. Quinoa, soaked overnight, and then cooked in the morning beforehand

- about a tbs, raw

7. Chia Seeds

8. Bran

9. Psyllium Husk

10: coriander, parsley

Items 6-7 were added at the end, when the tofu had the right amount of

"doneness". I like the coriander and parsley to be cooked a bit, not

just at the end

In India, everything can be sacred and a shrine and this tree is marked auspiciously with turmeric and tikka powders.

The central figures are a dancing Shiva, his consort Pavarti and in front, elephant-headed Ganesh.

 

Welcoming all faiths to experience a part of the religion, the sadhu performed a pooja and prayer for us for health and success including annointing the idols with oil, sandalwood and other items, offering flowers (jasmine), wafting incence and marking of our foreheads with sacred ash and red kumkum (vermillion), made from tumeric and slacked lime.

A newly discovered drink at my local gluten free vegan bakery....ShambalaBakery...I don't have all the ingredients but it has tumeric, chili, cinnamon, two shots of espresso, and hemp milk and honey. It is a perfect drink for such a cold day to be out and about.

Make a light salad with bold flavors and top with sweet berries for a fantastic first course. The contrast of sweet pecans and tart vinaigrette is a fantastic pairing with peppery arugula and sweet blueberries and raspberries.

I marinated the chicken in a Ginger and Tumeric tandoori paste, with added garlic, pepper and olive oil. Was v. tasty, served with salad in pitta breads.

Instead of using fishcakes, I had used fishballs in its place. I had included an extra stalk of lemon grass in the ground spice paste; used factory made coconut cream and had reduced the blachan to half a tablespoon. As the amount of water used to cook the prawns was not stated, I cooked the prawns in some water and discarded the prawn stock. I used 1.7 litres of boiling water in the laksa gravy instead. As to how creamy, or lemak as we said it locally, you want the laksa gravy to be, just adjust this by adding more or reducing the amount of coconut cream to your liking.

 

Though my family said this home cooked laksa was not bad, somehow I felt a little oomph was missing. May be I will test it out by adding extra dried shrimps; blachan, coriander powder and chilli powder to the remaining gravy.

 

Laksa ingredients I used:

30 fishballs [homemade]

300g medium prawns

10 tofu puffs

2stalks lemon grass, white stem portion, crushed

4 tbsp oil

2 packets of 200 ml coconut cream

Salt and ajinomoto to taste

1 tbsp sugar

Pepper

500g (1 lb) dried thick rice noodles

300g bean sprouts, scalded

  

Ground ingredients into a paste:

12 shallots, peeled

15 dried chillies, softened in hot water

3 red chillies

½ tbsp blachan (shrimp paste)

3 tbsp dried shrimp, soaked for a while in water to soften

6 buah keras (candlenuts)

1 thumb size turmeric or 1 tsp turmeric powder

½ tbsp roasted coriander powder

1 stalk lemon grass

   

Ingredients: enriched flour bleached (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid), sugar, brown sugar, partially hydrogenated soybean and cottonseed oil, whey, dextrose, eggs, salt, baking soda, dried molasses, soy flour, artificial flavor. Nasi kuning is an Indonesian rice dish cooked with coconut milk , tumeric, pandan leaves. It usually served with shredded omelet, Javanese style fried chicken , potato fritters . Those three kind of side dishes are our favorite :)

I've always wanted to try Moroccan or Tunisian couscous, but I've never had the opportunity, so I finally decided to make it myself. I cobbled together my own recipe from several different sources. I can't speak to its authenticity, but I really enjoyed the flavor of the vegetables and the steamed couscous.

 

This dish contains couscous, olive oil, ghee, onions, salt, cumin, cayenne, allspice, Garam Masala, tumeric, paprika, turnips, potatoes, sweet potatoes, zucchini, carrots, and chick peas. Next time I will probably double the chickpeas and also add a bit of ground ginger. I used the Garam Masala in place of Ras-El-Hanout.

Fried tumeric-and-salt-marinated chicken, to be used for my version of ayam masak merah.

 

If the chicken pieces were chopped into smaller pieces, marinated and fried like this, I could serve it as a dish already!

 

I shallow fried it to save oil.
